    So i watched a documentary on how bread is made in the middle east (and most likely how it was made before rapid rise yeast) - they made a “sour” and it had to rise over a day or so. The bacteria in the sour ate the gluten. So when it was cooked there was about 1% of the original gluten left. Could this be one of the factors? (Not counting the chemicals and processing)

    I have heard so much about the issue in regards to gluten sensitivity/ intolerance as to if it is an imaginary response or a real condition. I know for me if I have foods with a gluten content I get the obvious bloating and also a type of psoriasis on the top of my scalp. You do not need wheat or grains to have the nutrients you mentioned if you have a good variety of whole foods you will be well on the way to a well rounded nutritional intake. As you quite rightly mentioned there are other factors in the production of modern day grains that are added elements detracting from its original composition and description as "the staff of life" Regards Russell

    I clearly have had reactions to gluten long before it was a recognised thing. Without it( and I am not coeliac!) I am 100% healthier. I tried going gluten free for 2 years with no results until I realised beer had gluten in it. Then I stopped drinking beer and immediately felt the positive effects!!
