WHITE CHICKEN LASAGNA WITH SPINACH INGREDIENTS:
For the Béchamel Sauce with Spinach:
4 tbsp unsalted butter
1 cup onion, chopped
3 cloves garlic, minced
4 tbsp flour
1 cup whole milk
1 cup heavy cream
2 cups chicken stock
4 cups fresh spinach
2 tsp Kosher salt
1 tsp black pepper
2 tbsp grated Parmesan cheese
For the Ricotta Mixture:
1 15 oz container Ricotta cheese (whole milk)
1 large egg
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan cheese
For Assembling the Lasagna:
4 cups cooked chicken
13 lasagna noodles, cooked
4 cups shredded mozzarella
1 cup grated Parmesan
1 tbsp fresh parsley, chopped, for garnish

@@HowToFeedaLoon It was friggen awesome! I added sweet peas to the béchamel because I had them and wanted more vegetables. Also added a few ounces of fresh basil to the cheese mix. Will try mushrooms next time. SO appreciate this recipe. Thank you :D
