I’m a Japanese and living in Japan for twenty years. I honestly don’t eat udon that much. But watching him making udon from the scratch made me inspired. Yeah, I’ll make udon for dinner tomorrow 😂

I don’t know how how often you eat eggs, but I’ve been marinating my own eggs for ramen (soft boiled, peeled, then in a glass jar in the fridge in the marinade). They’re incredible on anything from salad to actual ramen. Let me know if you want the recipe 👍🏼.

Alright team, I wing all my recipes, but here are the basics.
Boil your eggs for exactly 6 minutes. The yolks will still be runny which is what you want. After you pull them from the boiling water, you dump them in a bowl of ice water for 2 minutes to halt the cooking and help peeling. Peel the eggs. Drop them in this marinade:
3/4 cup of mirin
1/4 cup of soy sauce
1/4 cup of dark soy sauce
A couple dashes of Worcestershire
Some cayenne if you like spice
Some garlic if you want, would recommend.
Leave them from 1-3 days to marinate. The yolks will become jammy and the exteriors become dark and delicious looking.

I think you remind a lot of us of our 20-25 year old selves. Except we did not have GoPro's and iPhone's. We had Amigo's and wait times at photography shops. The adventures were equally as good and thankfully you can share it to the world now. Love these videos!

Boneless Anchovies makes very good soup base. Fried the anchovies and put water. Season with a dash from bottled abalone sauce, meat, vegetables, a dash salt, fried garlic & garlic oil
