As a former pizza maker at Silvios back in th 90's, we would put cheese on the sauce base, then shake off anything not stuck, then the toppings, then cheese on top. So the best way is cheese top and bottom :) Hoping to be able to see you guys on Saturday, massive fans, you guys inspired us to do our own WA NT trip, two years ago in our own Forbes 13+.

Hey guys! I used to own a pizza shop, you put a little bit of cheese on the bottom to help the toppings stick, but you also pack the top with cheese! Hope this helps
From a construction and engineering point of view… the cheese in the bottom is to bond the topping to the base like a mortar bed for a brick to a footing, the cheese on top also locks the topping together. This way, your topping doesn’t slide of the base on the first bite. Byproduct of this methodology is more cheese which can’t be complained about. 😂
I like your methodology. however, surely the density of the ingredients vs the small inclination a pizza experiences is enough for said ingredients so stick to the base by F=MA (ie A = gravity in this situation). I am personally more interested about the insulation and heat transfer with the cheese on top. Totally agree with your conclusion, more cheese.......why does it need to be an either or situation anyway......just have cheese on the bottom and top! All good mate, just silly banter on an excellent youtube channel.

We make our own pizza dough...so easy to do anywhere or pre do them before a trip and left as dough balls. Just a little "cheese> on the bottom and top works for us. The pizza oven seems to be spot on!

Haha Chloe knows the cheese is better on the bottom even on pre-cooked bases... if you cook it a little longer the toppings melt into the cheese... way better to make your own bases it's soooo easy to do... that's why cheese goes onto the bottom on a proper raw pizza base so the cheese won't burn while the base cooks ;)
Cheese, yep that’s a great photo 😂. A little trick if you’re interested. You screwed a tarp hook onto your stone guard. I put 2 of these on my stone stomper at the tow bar on top of the square tube. Now I don’t have to feed the elastic around the square tube. Just hook it onto the tarp hooks. Just my little hack. Cheers. Love your channel.

My preference is mozzerella cheese on the bottom and cheddar on the top. The cheese on the bottom helps to keep all the ingredients on the base and the cheese on top keeps everything together 😋

I was a Pizza Hut manager for ten years back when they were a dine in restaurants, and the sequence we used to make the pizzas was. Sauce, cheese, flat meats, like peperroni, vegs, any other meats, prawns, anchovies then more cheese if extra cheese was ordered. I personally prefered a bit more cheese on top just to bind it all together. The cheese must be Mozzarella. I am not saying that is right or wrong, just the way we did it. Allways look forward to your vids.

Loving the CHEESE idea on the pizza. I like to actually mix all the pizza ingredients in a bowl...including cheese...spread the sauce on the base then a handful of mixture and cook. A great way to make 12 small pizzas using a pack of 12 bases. Hubby is drooling over your pizza oven!!!
As a former pizza professional (assistant manager of a Pizza Hut store many years ago lol), cheese goes in both the top and the bottom, just smaller amounts than you’d think. However there are some exceptions eg pepperoni is bottom cheese only.
CHEESE# We do cheese on the bottom & and also, for the base, we use 2 slices of Roasted Garlic Mission wraps with BBQ sauce in-between to make base crisper (gamechanger) then sauce on top & whatever topping you like. Great Video content.

Hi Cam & Tiff, I used to make pizzas in my bakery and I would put a little bit is “cheese” on the bottom and most on the top… Also, I like the idea of changing batteries from your car. I’ve installed a second power inlet on my van which is only connected to the ac-dc charger (only 700w) This way I can run the AC off the inverter and use my Honda EU22 generator to just run the ac-dc to charge the batteries (location permitting) and it does this at idle so barely audible as it’s not effected by the AC cycling. Have tested on a 34deg day and ran for 8hrs and battery still nearly full.
We do some toppings under the 'cheese' , and others on top, depending on how we want them cooked. Eg cherry tomatoes go on top, so they dry out more and get mire roasted 😎
