    In Port of Spain's markets, ingredients from Europe, Africa, and the Indian subcontinent come together on vendor tables. Culantro here is known as shadow benny or chadon benni -- a corruption of the French chardon benit or "blessed thistle." It is a part of the green seasoning that is a Trinidad and Tobago culinary basic. Chef Debra Sardinha-Metivier of DSM Creative Cuisine, gives us our first look at the diversity of the Trinidadian market basket.

    How many Caribbean people in the diaspora really know how to prepare the items on display...the way our ancestors did? I hope the Chefs will show the next generation (on CZcams) how to prepare tasty and staple Trini foods using these items.

    and yuh see dat bottle seasoning yuh holding there sir, is DE best seasoning I believe mankind could ever come across! it's a crying shame our cuisine is not more widely recognize. But yuh know what! it may be for a good, because such flavorful green seasonings is so unique to Trinidad and Tobago that it keeps our food pure and unblemished. I love my Trini food.

    Both the women chief from the beginning and the man chief at the end spoke very interlectual and educated. They both gave exceptional explanations on the different market ingredients and indigenous cuisine..

    To people who ask if Chardon Beni shadon Beni or shadow beni( known also as bhandhania or culantro) now come into existence , the answer is NO, it been there for decades, growing wild in the back of people yard,
    For people living outside Trinidad, shadon Beni can be brought at any international supermarket under the name CULANTRO not cilantro.
    It makes great blended green seasoning along with other green herbs and it also makes fish dish taste great

      If you ever do visit Trinidad and Tobago it is best to go around Carnival Season/time, you would get to know a lot more of the culture and the people there especially the food and music. A lot of tourists travel there at that time.

    Lived in Port of Spain (PIARCO) for 15 months Was consulting for Caribbean airlines - Was excellent experience. I love to cook and was a regular at the market. The only thing I could not find was Coriander!!

      There is a shop on Broadway in POS where you'll find all different kinds of spices. Chinese shop on Charlotte St good too!

    Myself from spices business family and FOODIE BY HEART having travel 14 countries I can say you got best of truly vast range in fruits vegetables and spices too. Lucky wish I was there to enjoy or cook something my Indian style gujju vegetarian or even Rajasthani food trust me I would love o have taste of yourside cusine

    The ignorance of The Culinary Institute of American is speaking. I would like to know what ingredients from Europe is he talking about. Habaneros are from Yucatan in Mexico and of course the Tomatoes are from Mexico. Trinida has its native ingredients too and should be given credit to.

      @@ramondtango6117 Thanks. I usually stay in Petit Valley. When COVID is over and I visit, I plan to venture out to the markets in central and southern Trinidad for a different experience from the typical supermarkets. I would also like to bring back some condiments, a good iron pot and some mamey sepote if they are in season. Nothing is better than Trinidad's fruits which are so much better than apples, pears, grapes, etc.
