🍀Ingredients
• Bread Flour 3 cups
• An Egg
• Sugar 25g
• Salt 1/2 tsp
• Instant Active Dry Yeast 1tsp
• Milk 50ml
• Water 100ml
• Butter Unsalted (Softened) 30g
• Breadcrumbs
• Water
✒Instructions
1. Make the dough, in a bowl of flour create a hole for the 3 ingredients and pour the following separately sugar, salt and yeast give it a mix then add the wet ingredients milk, water and egg. Combine until it become a rough dough.
2. Knead the dough in a bowl to comes together and move it on a working surface and knead until smooth for about 8 minutes.
3. Add the softened butter and knead until all the butter absorbed. Transfer the dough to a bowl, cover with plastic and let proof for 1 hour or until doubled in size.

5. For the cheese i suggest to use an eden cheese, since it's hard to find eden cheese here in my area, so i just used a quick melt cheese
6. Punch down the dough and divide it into 10 equal portions or weighing 60g each. Roll each portion into a ball, cover loosely with a kitchen towel or cling wrap and let rest for 15 minutes.
7. Take one of the dough ball and flatten a piece of dough to the size of your palm. Add in about 2-3 Tbsp of the filling ube halaya and cheese. Place in the middle of the dough. Fold the outter rims into the middle. Pinch the middle together to seal. Shape into a ball and dip into the water. Coat the croquette dough on breadcrumbs coat both sides. Place on a parchment-lined baking sheet and press it like a patty and cover. Repeat with the remaining dough. Lightly cover the dough and proof for 30 minutes.
8. Heat oil in a pot until 340 degrees F (170 C).
*Use a candy thermometer for easiest frying. Without one, test if the oil is hot enough by throwing in a piece of breadcrumb into the oil. The breadcrumb should float. If the breadcrumb sinks, it's not hot enough yet.
Place a dough gently into the oil. Fry the first side for about 2 minutes or until lightly browned, Flip the dough over and fry for another 45 seconds to 1:30 minutes, until both sides are lightly fried. Repeat!
9. Serve while it's warm
