Stipe in his prime was simply excellent. But he never faced Jones and now he's out of his prime. I want to think he could beat Jones, maybe he could, but Jones is just another league from everybody.
I put gsp ahead of jones personally. Also if jones retires when the interim heavyweight champ is crowned that will say a lot I believe.

Jones is also out of his prime. Got beaten by Reyes then beat a heavyweight with literally 0 wrestling.
