    I’m too American to figure out what 30 degrees Celsius is but I’m gonna agree with you and say I’d prefer the original on the beach too. However the clarified version sounds like a nice clean summer sidewalk cafe drink. I dig it. 🥃

      Yea milk clarification is something I’m really into now! It’s amazing how it transforms a cocktail! A clarified Negroni is amazing!

      Do you have a favorite? So far my fav is a clarified Negroni... it tones down the bitterness and brings out a sweetness.. the transformation is unreal!

    Wait, 30°c is like 132.6° f, right?!?! Gimme the unfiltered version. The clarified version looks yummy, but I like the full flavor of rum. Great video Rob!!!

      haha, not quite, 39 C is about 86 F... still hot though! And we usually have humidity here in Canada so it's just disgustingly hot when that happens... in that weather, you can have 4-5 Mai Tais and not feel a thing... you just sweat it out! LOL

    I use that same recipe. It still surprises me when costumers at my bar go “where’s my grenadine or pineapple juice” so sometimes I have to just do as they say🤨😂😂

      LOL I know!!! Apparently there’s Don’s Mai Tai which uses fruit juices and I’ve also heard the term “Tropical Mai Tai” used which includes pineapple and Grenadine but definitely the OG Trader Vic’s is the best!

    Both looks great, but even if I haven't try the clarified version I kind of share your opinion that the classic one in a way feels nicer. Maybe it is a mix of habit and trying to keep the classics as they are... I do not know. But in any case great video. Cheers!

    I have yet to try milk clarification. Not sure why, though I read many article that state the same as you. Great but some drinks lose their sparks. Great video! I hope your dog gets some revenge on those walkers!!

      The clarified Mai Tai wasn’t my favourite but maybe that’s because the classic Mai Tai is probably my second favourite drink! Hard to beat! ...a clarified Negroni however was AMAZING! (Negroni recipe + 1 oz lemon + 1 oz milk)... that one truly transforms into something completely different! Worth trying!

    can you remind me that I want to try a clarified mai tai once it does get warm?
    You do such a nice job with those ice balls you should do some more clarified stuff! I did it with batched bloody Mary’s for a summer brunch once - but using agar not milk. It was wild!

      Clarified Bloody Mary, that sounds interesting! I did a clarified Negroni recently and it was amazing! Still bitter but milder and packed with flavor!

      Haha yes that is my menu! When hosting parties with friends and family, I got tired of people asking what kind of drinks I can make... being a graphic designer, I decided to make my own menu with my favorite drinks! 😜

    I have never heard of this before! Not sure my wife will allow me 30 minutes to make her a drink, but I kinda want to try this. Lol. How did you learn about this variation? Really interesting.

      You can "Milk Wash" or "Clarify" almost ANY cocktail! If you follow Truffles on the Rocks, he LOVES doing milk clarifications. A milked washed Negroni is probably my favorite (standard negroni recipe + 1 oz lemon juice + 1 oz milk... and then do the same filtering process). It's definitely something that takes time but totally worth trying, it chemically changes the cocktail so the flavor and texture is wildly different.

      It's also a good way to preserve a cocktail. you can milk wash a huge batch of any cocktail, bottle it and refrigerate it'll be good for a long time! then you have a ready to go cocktail whenever you want!

    I feel very strongly about the mai tai. You’ll see it soon haha. Great video! Even though I love clarified cocktails, I can see that you would loose a lot of the essence and flavors of tiki cocktails, if you clarify them.

    adding milk to the drink doesn't work because of science Rob, duh. Clarified drinks always blow my mind, I feel like its some kind of a cheat code in the cocktail making world. up up down down L1 L2 R1 R2 up right down left boom clarified cocktail.
