I think the pickle brine used in the buttermilk was from SWEET pickles. The cucumber pickle he made was a DILL pickle. I worked at a broasted chicken place, they made a side dip to serve with the chicken that was blended together cucumber chips and juice, chopped onion, and a gallon of Best Foods mayo. It was killer with the chicken, the customers loved it.

Other hand, I still use breasts in my coconut Red and Massaman curry chicken as well as my quesadillas. If I'm doing middle eastern, it's gotta be thighs. Love the stuff you do, Bro. Agreed on breast meat for the chicken sandwich. In general I agree with the flavor of thigh being better, but with the sandwich you want the heft of the breast meat and it being fried you are easily able to have a crazy juicy piece of meat. The texture contrast of the crispy outside and meaty breast is just a better balance for me in a sandwich.
