  • As a barista are you feeling that you're struggling with slow coffee service and keeping your espresso bar clean? Especially when you get busy and the pressure is on? Well we definitely don't want you to lower your standards and fall into the category of being unhygienic so here's a few tips that will help you out.

    I've used magnets for holding things like brushes etc to keep them within reach but up and out of the way.

    I did this today at the coffee shop i work and it make things easier. Especially having the coffee mop cleaner under the grinder, i used to loose it a lot. Thanks guys for these!
    Can you make a video about be more efficiant while delivering several drinks at once? (like an order of 6 lattes) and being

      Thanks. We have a video on the coffee menu, the flow and how to work behind a machine changes per list of coffee you have. But a flow video could be good. Also the process of 1-2-3 staff on a machine changes this

      @@malevaldata9824 he means how many people working behind the machine , if u want my advice , if u have a list of 6 different coffees and u are by urself, put the bigger jug of milk*, which is for more of ur coffee, like for example if it is 4 full cream latte and 2 soy latte , so u lut a big jug of full cream to steam ,, then u start making shots while it is steaming , once it finish u out the next jug and keep loading guns.. that is how I work solo

    Hi Artisti. In some of your video I noticed u guys using Norco full cream. How do you feel about the Norco full cream and the Capo barista milk??? Which one do u prefer and why???

      Great question, we use Norco as it’s a local milk and farmer co -op. The full cream is great, the capo is modified to make more foam and had a richer taste. We think it’s too heavy and cuts through the espresso too much making a milky coffee. It’s great when there are floods or a drought as it will help stabilise the foam but that would be the only time we would consider it.

    All good tips, but maybe don't say that splashing a spoon under less than boiling water for only a few seconds sanitizes it. Cuz it just doesn't. It is sufficiently sanitary in this case, but not sanitized. If you want an actually sanitized spoon you can keep it in a container of food safe sanitizer and then rinse it with the hot water tap to remove any sanitizer if you want/need to before you use it.

      @@ojaimark The spoon is clean to begin with, and it's only exposed to water-soluble foodstuffs, and then replaced on a sanitized surface. I feel boiling water rinse is easily good enough hygiene

    If you use a thermometer, how is the right way to keep it clean in between milks?

      Same as you keep your steam wand clean between milks - just wiping it with a cloth would be enough?

    I would like to ask, is it ok to leave the used coffee puck in the machine for some time and clean it when i will start preparing another coffee or is it better to remove the old puck as soon as possible?

      Great question, there are 2 thoughts on this, leaving it in keeps a good thermal temp in the head, however it then keeps the coffee oils in the shower screen and they go solid marking the head have a build up effecting taste. So if you remove it and rinse it, it’s clean but when it goes back in it has a build up of moisture and can super heat the head. We prefer removing to keep the head clean as we can deal with the water and heat. 👍🏻

      Chux cloths in blue, brown on the coffee area, on the knock tube we use a standard tea towel or a rhino grind cloth

    Is it important to have five different jugs for different milk?

      No, you can have a jug washer and it will lessen the number of jugs needed. You do need to not have a cross of the milks for the hygiene issues if you can’t wash them
