  • I had a load of odds and ends of vegetables that need using up, and it's a cold wet rainy winter day, so I'm going to stay home and make some soup.

    Hi! i just wanted to thank you, because my dad died of cancer a few days ago, but he got to see this video. And he wasnt able to eat, but he liked watching you picking berries and making food, or finding cool things at a beach. And I used to watch them with him. Thank you for giving him a good experience even though he couldn’t eat.

    Thank you! This was just what I needed. Not because I am in need of soup, but it was a relaxing video to come home to after a traffic accident, I'm still finding glass chards in my hair. I'm okay, nobody got seriously hurt, I just had some glass particles in my left eye that have been rinsed out. It was just a case of passing eachother to closely and the driver of the other vehicle going to fast (a bus and the driver didn't even notice (s)he drove into us, the police are tracking the driver down). The car on the other hand is not okay.
    I just wish people would slow down a bit during winters.
    Just wanted you to know that you are a person that makes people calm down.

    "Veg Bones" made me giggle a bit.
    With regards to washing lentils - it's more important when you're making something that's mostly lentil such as daal. Means you don't have to deal with as much scum which can boil over or become burned on to the pot and make it a pain to clean. When it comes to a lower ratio of lentils like this, it doesn't matter too much.

      ​@GIBBO4182 it might be too easy but £5 a day is a more realistic amount you'd get to spend on food.
      I'm super interested to see what he can come up with still under the guise of a challenge to help me along the way with budgeting too!
      Always helpful to learn how to save a penny and still get nutrients and a decent meal :)

    Brilliant tip for getting the dregs out of the tomato paste tube. One of those 'why didn't I think of that' ideas.

      Anything flat is fine. I mostly use the back of a butterknife handle, or the stick side of a wooden spoon. Just drag/push the paste towards the opening. For me it's easier&quicker than rummaging for my rolling pin 😅.

    That did look like a mighty soup. I don't have a pressure cooker, but I do have a slow cooker, so my soups take all day "blipping away" - it all works out the same, I just have to wait longer 😄

      That was basically my dinner tonight. It was the last of a batch I made three days ago. It sat in the fridge while I ate something else last night so tonight I finished it off. A microwave heats a bowl nicely.

      Probably 30 or so minutes, not so hard to wait for after the hard veg has been baked/roasted.

    I made soup this week too with Turkey carcass/leftovers, parsnip, Celeriac, Carrots, and onion. I even chucked the remains of the cranberry sauce jar into the mix.
    I also used a small amount of stock from a slow cooked gammon.
    Added some double cream, and blended to a nice creamy smooth soup.
    Hope my old man eats more of the soup than he did the Dinner I cooked for him. I'll find out tomorrow I guess.
    Thankyou Shrimp for giving me inspiration over the years on how to be creative with very little.

      Isn't turkey carcass-based soup the best? My absolute favorite. Wish I could try yours! My Thanksgiving turkey carcass is still in the freezer waiting . . .

    That is basically what I call "Fridge Soup". Basically anything getting old or almost used up goes into the pot. Also lentils, barley, beans, you name it and often leftover meat. Some of the best ones I ever made are from the odds & ends. As thick as yours is I call Stoup.( Stew and Soup). I like a bit of L&P sauce and soy sauce for extra flavor, as I often use potatoes which need the extra salt. Good video.

    I'm always amazed at the versatility of soups/stews. It can literally be a case of throwing a bunch of random things that need to be used before they go bad in a big pot of boiling water, but it almost always turns into a hearty, nutritious, and filling meal that's easy on the budget. It's part of the reason why I love the traditional fall/winter soup season.

    Today is my birthday, and I'm sipping whisky and doing my prep work for the pork loin roast I'll be making. Slicing carrots into thin rounds, dicing potatoes, chopping a giant onion into small slivers that will almost melt in the pressure cooker, adding a touch of gochujang for a bit of kick with some cabbage for color and texture. Watching you make this amazing veggie soup is the perfect thing to have playing as I do my work. May you, Jenny, and of course Eva have a wonderful New Years, sitting by the fire with a bowl of soup and some crusty bread to sop up the liquid.

    Watching you make this soup was like watching myself making the soup. Everything you did was the stuff I would do: getting the last gasp out of the tube of purée, deglazing the tray, freezing scraps for stick and composting the rest. No waste, just goodness!

    I genuinely have to thank you. I have always been a relatively conscientious cook when it comes to using all available parts of my food, but watching your content (especially the budget challenges) has made me rethink my strategies even more. It has now become a running joke between me and my boyfriend for how little waste I can have after I cook, and I'm starting to buy ingredients with multiple uses in mind!
    I didn't want a traditional Thanksgiving this year, so we had pulled pork. I was going to just get a cheap, lean cut, but I saw another cut that was a bit larger, just a little more expensive, and it had this huge cap of fat on it that I could use to flavor and fry up other parts of the meal. He was laughing at me when I was all excited, pointing out this slab of fat. "Think of the possibilities~!" 😆 So truly, from the bottom of my heart, thank you for sharing these down-to-earth, approachable, and mindful methods of cooking. It's given me more to think about!

    After a bit of over indulgence over Christmas I decided tomorrow to make a big vat of vegetable soup. Like you I tend to use whatever I have and bought some extra veg, no two soups are ever the same. I tend to blend mine but it does become a bit baby-food-ish and makes it easier for the kids to gulp down without identifying things they might think they don’t like. I do fancy making a nice chunky one like this though soon, it looks delicious! I shall be adding some lentils after watching this and I might add some bulgar wheat too and save my spuds for something else. Hope you have a great new year!

    I mean honest with you I don't think I've made a single Atomic shrimp soup recipe but I've made many Atomic shrimp inspired recipes everybody loves my vegetable soup now thanks for being a great inspiration

    Got inspired by this and ended up with a really nice pasta
    fried finely diced shallots with some ginger, removed from the pan but keep the oil
    next I diced up leftover broccoli stem and fennel into small bits and fried it off.
    Thought it could use some garlic so fried a fine dice too of a clove.
    After that, kept the oil and veggies, boiled some spaghetti in the same pot i fried in, strained the water but then added everything back in for a quick mix.
    The garlic and shallots keep that nice familiar base while the ginger and fennel really pair well and make the dish warm.

    This style of cooking takes an inner confidence that comes naturally to some people, but can also be taught. My hope is that your viewers are learning the basis behind cooking with random bits and bobs and gaining confidence to give it a go!

    Fridge cleaning soup! My go-to in the winter for lunches for the work week. I do the same thing in the summer but I usually make salsa or a lentil picadillo. Red lentils work amazing for lentil picadillo since the lentils get really soft and gives it a nice texture.

    honestly this is probably the most important 'recipe' i learned when i first started cooking. if it's the end of the week or you have stuff that needs using up then you can dump basically anything into a soup and it'll end up tasting pretty good

    Some of my ancestors would have put a jar of sour cream on the table, some a few slices of bread, serving soup on its own would have been seen as "stingy" in their community.
    Sour cream also helps mitigate spicy heat.

    I'm actually using up some random veggies tonight for dinner. I'm making penne pasta with garlic, shallots, tomatoes, and spinach. :) Probably fry up a chicken breast to put in there as well.

    Good to see you tossing the vegetables in tomato puree directly ON the tray, I'm trying to train my partner to cook like this, he is of the school that would toss ingredients in a seperate bowl, which sometimes you end up eating out of later but usually just creates extra washing up.

      Yeah, where possible, I try to avoid wasting flavour - like, if there is water to be added, I use the same water to first rinse out that can of tomatoes I added earlier and tip that into the pot

    One way to get a hint of spice without using hot peppers is to add a pinch of dried dill. It's not actually hot in the same sense as chilies or pepper (completely different chemical composition), but gives a somewhat similar sensation for a moment (just in the mouth and it doesn't linger). To get just the pepper flakes aroma you can use a pinch of sweet pepper powder, just beware it will add a lot of color to the soup as well.

    Ahh! Moms Mustgo Soup! This is great for the end of cycle fridge cleaning. Also for that bit of meat or 2 leftover chicken wings that aren't suitable for a snack. For this I like to slow and low it til it gets thick. Esp when meat or stickey starches are involved. And it's raining here so tomorrow seems the perfect time to make last sundays hot and sour soup into something awesome!

    a tip for oversalting is throwing a peeled potato in the dish it will soak up a bit of the salt after useing the potato yxou cant eat it anyxmore

    I’m making veggie, rice and leftover turkey bits soup. I pressure cooked the bones from the Christmas turkey for my stock. I’ll make cornbread or cheese biscuits to go with it. Nice warming, economical meal and some for the freezer as well. Cheers!

    Great recipe. I do this kind of thing. I call it "bottom of the fridge soup". 😊 I find a teaspoonful of sugar can give a depth of flavour but doesn't actually make it sweet. Sainsburys do a nice low salt malt extract at a reasonable price. I love your videos!

    My mom made vegetable soup all the time when I was a kid. I couldn’t stand the stuff. Having said that, Mr. Shrimp’s vegetable soup looks delicious!

    My grandma always hid the fact she used stewed tomatoes in her veggie soup for years. Was where all the flavor was.

    One of our staple dishes is cooked veggies, tin of beans added, half a tub of cream cheese n cheese n oat crumble on top…delicious

    Personally when it comes to garlic I just throw the entire bulb in when roasting. No need to chop as when it's fully roasted the garlic just pop right put of the bulb. Deifnitly great for people with lower dexterity but still want flavour.

    This looks good, I'd probably have personally blended it - I don't like chunks of vegetables in my soup mostly, just texture preference, but I can imagine the flavor profile here. In Poland we use buckwheat a lot and you can actually buy it already toasted - I recommend using it with some butter or maybe even yogurt as your carb for the meal sometime.

    I usually boil the gritful bits of veg peelings into the stock as well, and lose a little stock at the end, but I suppose not everyone's a fan of dirt.

    Ooh, you mentioned buckwheat flour and that made my mind run amock with an idea that maybe one day we're going to get a video on this channel on creating buckwheat flower and baking something with it!
    Also, that soup looks absolutely delish! It's also what I'd call a soup, too - it was a bit of a shock to the system when I moved to UK and found that "soup" is more known to be a blended veg thing, which I like to call a "hot smoothie", where as soup to me always have some sort of chunky veg (and other things) in it. I know that those kinds of soups also exist, but they don't appear to be as popular as the blended version.

      Yeah, 'soup' is subject to some weird gatekeeping by people who insist it has to be smooth in texture, because anything else is a stew. I don't know where they get that from; it is not a rule.

      Disclaimer: I don't think "soup fanbase" is made of soup fans, unlike its vegetable/chicken/beef/fish counterparts.

    Hi Guys...to save a bit of money when I have a tube of something (usually toothpaste) I cut it open and take the remains out.... the tomato paste tube I would clean up cut it open and just soak it in hot water (like the dry mushrooms). Hope someone finds this useful!

    It depends on the lentils if wash or not.
    The more common cheap split polished lentils. I don't bother. They've been through enough processing that there is minimal risk of any debris left in them.
    Buuut. Those fancy locally grown organic ones that haven't been through several machines between me and the field.
    Pick over and wash.
    Because yes, there's a few rocks and clods of dirt etc in the bag that have slipped through.
