Last night was very special. For the first time, my wife-who isn't a big fan of ASMR-finally agreed to watch one of your videos before bed. Exactly six minutes later, she was sleeping like a baby. Today, the first question during breakfast was: "Which Morika video will we watch tonight?" Well done!

I love bread! The times i have successfully made pizza and pretzels it was so difficult with my modest kitchen and old oven that I wouldnt attempt making more without a major craving. That last pizza i made was great but i thought “well there’s no way I’ll ever top this.” 😅 kneading and tossing by hand is a lot of messy trial and error.
But soo fun!! I make the pizza dough, but I'm not good at tossing it and shaping it 😁🧡

I certainly enjoy cooking and baking of all types but im often worried about surprising and impressing myself and my son. Since, i dont have a rewarding career it’s a little too important to my sense of self worth to succeed in hobbies and past times. But, i still have to be slightly apathetic about everything like Im not putting in much effort. Is that to prove im cool 😎or just in case i suck? Idk😅

i've been a chef for many years now, but breads are still, and probably always will be, my favourite thing to make. my starter mother died when i last moved, but this may just have incentivised me to get a new one going. let me know if you want an awesome focaccia recipe!

dough:
500g strong flour
15g fresh yeast
225g tepid (20º) water
2tbsp good olive oil
5g salt
salamoia (italian word for brine, i think?):
65g tepid water
65g olive oil
5g salt
-mix dough (just bring together, don't knead excessively) & salamoia separately
-rub dough w/ little olive oil, cover & prove 20 mins
oil a 35x25cm (half gastro, double recipe for 1/1 gastro tray) baking tray, gently flatten dough into tray (press away with palm of hand to spread, don't roll/stretch), oil dough again, cover & prove 20 mins
-dimple dough with fingers (similarly to how you'd prick a pastry case with a fork, prod gently & vertically), remix salamoia, pour over dough & into dimples, rest 20 mins
-175º for ~25-35 mins
-flavourings (fresh herbs, crushed garlic, fancy crystal salt etc) can be infused into the salamoia while dough proves, or sprinkled on top before salamoia is poured
-a smaller tin is better than a bigger one, else it can end up a bit flat & dense
