      Actually, crab cakes are made with cooked crab meat. Depending on the filler used, it may simply be a matter of cooking them until they are warmed through, and the surface is nicely browned.
      I was not impressed with the GR's version. Seems there was a fair amount of filler. Also, dipping them in egg wash and bread crumbs before frying detracts from the crab flavor. Then he adds unnecessary fat and calories by basting them in butter. Given his reputation, I would imagine they taste pretty good, he is just complicating something that doesn't need it.

    I saw what Gordon did there, the way he presented his plate. He tried to recreate a crab by using the asparagus as legs and the crab cake obviously the crabs body sitting on sand. It's a butterific idea!

    There is a place called G&M in Maryland (Maryland is known for crabs and crab cakes) and they serve “Jumbo lump crab cakes” and they are the best crab cakes I’ve ever tried and have won awards for their crab cakes.they are massive but cost about 25-30$ each. But have very little filler and are 100% worth it

    In my opinion, this is the best method for cooking your crab cake. The egg wash really is the key to holding everything together. Otherwise it's just too delicate and it falls apart too easily. Now as far as making the cake itself, you're on your own lol

    alright, I'm making this tomorrow. Crab cakes in the refrigerator, and boy it was not easy making them. I settled to place them all on their own separate small saucer, with foil over each. Friday, I try the Buttermilk Fried Chicken/yam hash.

    I've never breaded the outside of my crab cakes since there made out of panko already. But that definitely is beautiful. I'll give it a try next time. Mixing Sriracha and Mayonnaise makes a good topping for a crab cake btw if anyone ever wants try it

    This was a very concise video. This is to teach some principles of cooking, so you can integrated it with your other cooking. The internal contents of the crab cake is not an important detail. You can use any your can find. The fact that they should be refrigerated the day before was a nice tip. Also adding butter to olive to prevent olive oil from burning is a new one to me (butter contains water).

    Directions
    Assemble the crab cakes: In a sauté pan over medium-low heat, sweat the garlic and shallots together with butter and Old Bay seasoning until garlic is fragrant and shallots translucent. Be sure not to burn the garlic. Remove from heat and allow to cool. In a large mixing bowl, add the garlic and shallots to the crab meat. Add remaining ingredients and gently combine. Season to taste and form into 3-ounce patties. In a sauté pan over medium heat, add a little oil and sear crab cakes evenly on both sides and then finish in a 400-degree oven until heated through.

    Im from southern md. Our crab cakes are simple. Couple scoops mayo, couple squirts of mustard, few dashes of old bay or J.O. Smash about 10 to 12 ritz crackers and then knead the mixture together until the crab meat seems minced. Then taste.
    If it falls apart: add crackers too bland: add spice or mustard. then get your pan with enough hot oil that the crab cake is about a 1/4 to a 1/3 submerged in the oil. Dont flip too many times or too hard they are delicate until they form a seal.

      I've never seen a crab cake like the one he made.
      Then again, I have lived in multiple cities and states, but all of which have bordered Maryland.

      I think his is a mix of super finely diced veggies and crab, similar to the one he had to do with the amateur chef where he can to guide him using his mouth and neither could see what the other was doing.
      Idk how crab cakes are make in MD, but I haven't had a bad crab cake (yet, and hopefully never) so I don't think it's a weird looking one
