I never had Bhutanese food before, but I couldn't resist trying to make it anyway. I really REALLY faked it by throwing in as many peppers I had in my house (dried pasilla, dried japones, and fresh green bell) as well as a sprinkling of as many cheeses I could scrape up (cheddar, havarti, feta). My chilies are also really dry, so I let them cook first, then sliced them up before mixing it up, so they wouldn't shatter into bits.
I'm sure these were all sad substitutes, but the concept was good and I liked the milky, garlicky sauce a lot because it reminded me of eating Shin Ramyeon with a slice of cheese on top (the best way to eat it!). The pasillas were really sweet and mild, with a great chew. Even if it wasn't close to being authentic, it was still tasty with rice. Thanks for making an easy tutorial :D

Hi Druk girl. This is Nidhi from India. I love your recipes. Thanks for sharing them. I had recently travelled to Bhutan and carried back some Datshi. My family is loving the Ema Datshi and kewa Datshi I am making with your recipes.
I am just curious about one thing. When at Bhutan, my lips were always dry despite the heavy use of chapstick and consumption of suja. How do you all keep your lips soft? 😄

You need fresh red chill to make red dry chill.
Dry them under the sun until they are crispy and dry.
Make sure to avoid from rains while drying them. 😇
