Hi Wendy, wonderful video demonstration. I doubled the recipe, baked for 25 minutes in a 12 x 18 pan, and to my shock it completely shrunk and deflated upon removal from the oven. What on earth did I do wrong? 😢

You can make evaporated milk at home by reducing it on the stove.

You have to use a glass or stainless steel bowl. No plastic. It must be extremely clean, with no oil residue. Also, not even a drop of the yolk can get in the white before whipping.
