    Episode 4 in my 'Simple Ways' series, the aubergine (eggplant). Whether you love it or hate, this middle eastern dip is an absolute beauty and pairs well with so many different dishes. Full recipe below!
    Ingredients:
    2 aubergine (eggplant)
    3 tbsp tahini (also show you how to make it in the video)
    2 small garlic cloves (minced)
    2 tbsp yoghurt
    Juice of 1/2 lemon
    1 tsp cumin (add more or less to preference)
    2 tbsp olive oil (missed this clip in the video, but make sure to add it)
    Salt & pepper to taste
    Method:
    1. Roast the aubergines over an open flame for 10 minutes until charred on the outside and is completely cooked throughout (should be soft). If not, continue to cook over the open flame. If you don't have an open flame, you can roast these in the oven instead.
    2. Wrap the charred aubergine in foil and leave to cool (essential). Once cooled, remove the skins and crush in a pestle and mortar (or use a knife to very finely chop like it did).
    3. Mix the aubergine with the rest of the ingredients.
    4. Tip into a bowl and top with some chopped parsley, pomegranate seeds and a drizzle of olive oil. Enjoy!

      Was thinking about this the other day actually!     Palestinian here: It is so satisfying to see a traditional dish that we grew up eating be made so beautifully and accurately. Also, the fact that you call it Moutabbal and not Baba Ghanouj is even more satisfying! Because it's the name we actually use!

    I also feel like this’d be a great dip with something like Cassava chips or nachos, or maybe even just a regular naan hot out of the oven/pan.

    This is the first time I've seen a non middle eastern person on CZcams make moutabal the right way and actually call it by it's right name, you have no idea how amazing this is for me, thank you so much!! Also adding pomegranate is something I'll have to try seems like a great idea!!

      Adding pomegranate is indeed a great idea since it has some acidity,
      You can also use pomegranate molasses instead

    Been making this all my life, but I learned something today:
    I always make this exact recipe and called it Baba Ghanoush but it is in fact Moutabal. There is a subtle difference between the two in that moutabal is a dip that is really mashed whereas Baba ghanoush is chopped pieces, often with tomatoes and walnuts/pomegranate molasses (now I will try that asap haha).

    We Bengali people make “begun vorta" which means mashed eggplant.
    1.Coat the eggplant with mustard oil and roast it.Peel the skin.
    2. Then add raw or sauted onion,fried dried red chili 🌶️, salt and mustard oil. Mix them and garnish with chopped coriander ☘️
    Enjoy this with rice 🍚😋

    In East, we use white sesame to make tahini, this dish is called Muttabal in Jordan, Syria and lebanon, and Baba-ghanouj in Egypt ☺️👍

    @samseats in India there is a similar dish commonly known as bengan bharta/ wangya ch bharit /bharit it normally contains eggplant, tomato, onion, lime / lemon, red chilli powder / peprika , salt , fresh chilli's (optional)

    it's just, I want to tell you .... We cook the same aubergine but in a little bit different way ..... After roasting and peeling off its skin ... We properly cook it with lots of onion and variety of spices ....!
    We always eat it with Roti (made of wheat flour)... It's similar to Naan .... !

    Poke tuna looks very tasty!
    One important thing about making sushi rice is to cool rice to a room temperature with a fan after pouring the seasoned vinegar. Cooling with a fan gives a shine to the rice and prevents the rice to be soggy from the vinegar moisture.

    Try squab stuffed with short grain rice
    Make the rice quarter cooked or half cooked (if you want it more softened)

    Here in India we add chopped onions, tomatoes, green chilli, chilli powder, Salt and main ingredient- roasted peanut powder to this grilled eggplant and it's called 'Bharit'.

    One of my favorite dips yum! By the way, it's pronounced with the stress on the middle syllable and we don't usually say the o so it's kind of a clipped m sound at the beginning. M'TABal
