Christmas Gravy - Simple Ways

Episode 5 in the ‘Simple Ways’ series. This is so easy to do and will completely level up your Christmas roast. No gravy granules in sight 👀 I’ll show you how to make a homemade brown stock and with that, an irresistibly delicious gravy. If you don’t have time to make homemade stock (although I’d really recommend), make sure you use good quality stock - this is where the flavour really comes through. Full recipe below 🔥
Stock:
Made 1.75 litres
- 2.5kg bones - can use leftover carcass from a roast or fresh bones from a butcher (pork, beef, chicken, turkey etc - any mix will do).
- 2 carrots
- 2 onions
- 2 stalks of celery
- Small bunch of thyme
- 2 bay leaves
- 3 large cloves of garlic
- 8 pepper corns
- Enough water to cover bones (I used about 2.2 litres)
Gravy:
Serves 4-6
- 4 ladles of stock (roughly 950g / half the stock made)
- Fond (caramelised bits on bottom of pan) and meat juices from a roast
- 3 tbsp flour
- Generous glug of red wine - roughly 1 small glass (if you don't want to use alcohol, use a splash of vinegar instead)
- 1 heaped tsp marmite
- Salt & pepper to taste
Method:
1. To make the stock, place the bones into a roasting tray and roast in the oven at 200 C for 30-40 minutes until they get a nice colour on the outside. This will help enhance the flavour significantly. Remove bones from the oven and place into a large pan with the rest of the ingredients. Make sure that water just submerges everything. Bring to a simmer, skim off any scum, then cover and turn heat down to medium and cook for 7-8 hours. Once cooked, remove from heat, strain and leave to cool overnight. Skim off any fat from the top once cooled, and there you have a beautiful homemade stock.
2. Add flour into the pan with the fond and juices, and mix to make a roux.
3. Place pan onto a medium heat and gradually stir in the stock, mixing continuously to ensure there are no lumps (don't worry if there are a few though, you can strain these out later).
4. Once all of the stock has ben incorporated, add the marmite, wine. salt and pepper, and turn heat up to high and bubble away for about 10 minutes to burn off any alcohol and reduce the gravy. If you have some lumps left, strain the gravy, then serve. This is so simple to make but will be FULL of flavour. Enjoy!

Hey, Tom. Amateur cook but professional food lover here; I just wanted to chime in to say that you certainly can use cornstarch/flour or arrowroot to thicken your gravy. However, you'll want to use about one tablespoon of starch for every two cups of liquid. Mix the starch with ¼ cup of cold water to make a slurry, then whisk that into your simmering liquid. The texture won't be exactly that of a flour thickened gravy, and the meaty flavor and saltiness of the gravy will be more intense since the flour won't be there as a buffer, but it'll still be delicious 😋

I've bought a turkey breast for Christmas, struggling to find a butcher to sell me some turkey bones! Should be so easy, but i am finding increasingly that butchers don't actually butcher on site and are just a shop front for a bigger operation where things are butchered in a different location
