    There's one dish that students in Korea go to eat to relieve stress. That's Mala Xiang Guo or Mala Tang! It's a Sichuan hot-pot dish that brings out the fiery, numbing heat to make you sweat and release endorphins. You'll end up going through a few napkins, but you'll feel the endorphins running! Make it at home - times are crazy right now!

    Oh wow this looks amazing. I still haven't tried dried hotpot but love Chinese flavours so will have to try and find the sauce! Love wood ear mushrooms and those tofu sticks too!

    Yesssssss.....I definitely like ingredients that sing to my tastebuds. I'm glad that you showed us the noodles you used. When it comes to buying Asian noodles I'm confused and lost sometimes on what to choose. Love your recipes....I will be adding some of these ingredients (like the tofu skin) to my shopping list. Super happy that my local market has fresh wood ear mushrooms(something about that crunch.....i can't quit it)🤤. Thanks again for always adding delicious flavor inspiration to my week.

      Oh you have fresh wood ear mushrooms in your neighborhood supermarket? I'm pleasantly suprised! It's actually hard to source here in Korea as well. Are they grown locally in your area?

      @@FutureNeighbor I'm not sure. The market is called Sanwa. They are located in Florida and they are known for carrying a lot of Asian, Spanish and European vegetables. I am currently experimenting with trying to make maesil from the green plums I found at the market.

    I keep having this spicy mala xiang guo with chicken, seafood, fresh tofu, dry tofu, tofu skin, enoki mushroom, black fungus, potato and cauliflower garnished with spring onions and sesame seeds. The flavour is an explosion in your mouth! It is so so good but I need to learn making this at home! Thank you for the recipe!

    The Ma La Xiang Guo sauce you have is from Hai Di Lao, which is the largest hot pot chain in the world. Their hot pot soup base is readily available in all Chinese markets over the world so this shouldn't be difficult to find. Also, you can use the Ma La sauce for the hot pot for the Ma La xiang guo as well (they are interchangeable). The main difference is that the hot pot version contains beef fat as the oil, so it comes as a solid instead of a liquid. I actually find this version to be easier to use for MLXG because the sauce is easier to portion (it's solid so you can cut it up with a knife and use as much or as little as you want). I would personally skip adding oil to the pan to fry the garlic and ginger, and just add the sauce right away since there's already so much oil in the sauce. Your version looks great!

      I've never tired using the Hot Pot Version for MLXG but I'll have to try! Actually, will try it this weekend, as I do have the Hot Pot ones left over... I usually run out of the stir-fry ones rather quickly... Much appreciated!

I'm not really sure why they even have separate versions for ma la hot pot or MLXG, they are exactly the same except the oil is different (beef fat vs vegetable oil). Personally when I make MLXG, I add tofu skin (some people call it dried tofu), sliced potato, beef/fish balls, and chinese cabbage. I also recommend you try different brands of ma la hot pot soup bases in your MLXG, some of them taste pretty different.

      Very good info. I've looked but I was not able to find the solid version of HaiDiLao hot pot soup base. Can you help? Not the liquid version but the solid version that I can cut into sizes as necessary.

      @@sarendranakarmi2149 you don't need to buy the Hai Di Lao version, just look in the hot pot soup base aisle in your Chinese grocery and you'll definitely see other brands of sauce that are solid. They often have clear packaging so it's easy to see.

      In the mala restaurants here, they usually have 5 levels... we've never passed level 2... I dont which human are eating level 3, 4 and 5... it's a ridiculous level of spice heh!

      @@FutureNeighbor I worked at a ramen shop with 5 levels of spice too. I never go past level 2 but I know only 2 people who regularly get level 5 because they like it lol. everyone else does it for a challenge and hates it

    Add some black Chinese vinegar(if available) at the end of cooking for the additional flavour. Btw this is my clear fridge dish, u can throw in anything u have, popular ingredients to throw in are luncheon meat & blanced instant noodles!

    Tip: When you add the noodles, sprinkle a pinch of sugar and it tastes heavenly. Tiny pinch 🤏 so it's not sweet but it's just good.

    HI!! Really awesome video and I love your content. You have the pronunciation very close...it's shiang goo [it's just the second word you are off a tiny bit on]. Shiang goo means mushroom in Chinese. Keep up the awesome work! Love to Katie!

      Xiang guo (香鍋)in this sense refers to the fragrance (香) of the pot (鍋)that the food is cooking in. The most common word for mushroom is mogu 蘑菇

      He actually pronounced it just right at the end... in Mandarin at least it sounds like gwoh. It also doesn't mean mushroom, it refers to the aroma

    A bit light on the x and the g, otherwise it's nice of you showing this. In Singapore, it's also quite a craze! Except I'm a bit tight on money and the current condition of the world right now, and the fact there's hardly any friends to eat with and the inability to eat on spot is definitely limiting... Those are the two conditions MXG would taste good! Anyway, nice work!
