Making Royal Jam Fit For A King - Doing It Ourselves

- I Make a royal bramble jam using the most luxurious ingredients, inspired by my favourite cocktail, and a 400 year old recipe loved by a french King.
Ingredients:
1kg / 2.2 lb. Raspberries
1kg / 2.2 lb. Blackberries
2kg 4.4 lb Jam making Sugar (with added pectin)
1 Whole Vanilla Pod (Bourbon/Madagascar)
2 heaped tablespoons of Honey
1 Lemon (zest)
1 Lime (zest)
The juice of half a lime (optional)
1 Teaspoon of Mixed Spice
125ml / half a cup of Cognac
125ml / half a cup of Good Quality London Dry Gin
500ml Champagne
Consistency is better than perfection.

It’s so warm and cozy being in the kitchen of the cottage. You have it looking like it’s always been that way. It’s just a piece of art. The warmth of the wood, the wall color, all the copper and of course the icing on the cake, the blue & white dishes!!! I can feel the warmth of the stove and smell the jam all the way to the USA! Please include some of the cottage in every video. Can’t wait for the stairs to go in. ❤️

I joined The Pethericks just before Billy bought the Convent and so have been watching everything - but as I see your input, you are by far my favourite 'character' in the real life 'Soap' and as such I have been finding your chanel with past videos for a quality of entertainment that is really not matched at all on terrestrial TV. If you are serious about writing that cookbook personally I think that is a fabulous idea. You might consider making a few watercolor paintings of your cottage, garden, kitchen within the cookbook, and perhaps a few pictures of yourself also included. Create the book and put it on your vlog and put it for sale, people can download it - just like that artist friend of Stephanies has done with her art that one can purchase and download. I think you could have yourself a little gold mind. Its really a pleasure to see how far you have come in that last month(s), continued good fortune to you.

I have binge watched your content in the past two weeks and always thought I knew you, and couldn't say why. It just came to me, you look like Justin Timberlake, like a twin. You have great performance skills. You really do present yourself and edit beautifully. This episode has been so ejoyable.
What a treat on a Wednesday morning! I love these cooking and general life vlogs just as much as the renovation vlogs. I think anybody who has done work in their home over a number of months would be burned out by it so glad to see you taking a break and getting back to your other interests of late. Suggestion, any of these long life items you make you should get a small hamper together and give it away to a subscriber or Patreon at Christmas. Maybe an original water colour in there as well.

This was fab to watch. Enjoying while reclining in bed at 2 o'clock in the morning. When you put the spoon in the jam to taste I yell "oh no dont do that. " I was sure you were going to burn your mouth. How did you pull that off. You are fun to watch. Never a dull moment. Isabelle would be impressed. Top this Stephanie and Isabelle. You are the best hand washer ever. You are excellent teaching jam preservation. I am making mixed berry jam at the weeks end. I have never made victoria sponge cake. Is it like Angel food cake in America. I like a not so sweet berry coulis with my cakes. How about you. Splendid fun watching you create in the kitchen.

What a wonderful video start to finish! The opening was very evocative and made me feel like I was there! I loved the demonstration of the jam along with the historical aspects. The jam looks and sounds lovely. I'm from the Willamette Valley in Oregon USA and I've made jam with great grandmother, grandmother and mother over the years. We always used a funnel to keep the jam from making a mess. I've never heard of using butter to reduce the foam. We always removed the foam with a large spoon. Thanks for the wonderful recipe and the butter tip.

The Chateau looks so beautiful at night with the flood lights on it. Love the lamp and it is so special that it was your grandmother's. I love old family pieces.
In New Zealand the general practice for sealing jam jars (pots of about 450gm) that have round lips, is to use thin cellophane sheets held in place with rubber bands, either that or re-use commercial jam jars that have screw tops. I use the latter, but with the addition of a sheet of cellophane to assist sealing, and to help keep the jam "clean" from possible contamination from the old lids. Mind you the jars are washed, then heated in the oven at about 130 deg celcius, and the lids washed and then boiled.
