This dish has been inspired by the many wonderful recipes on the internet for Chinese Eggplant Stir Fry! The eggplant is sautéed to perfections giving it a smokey flavor and crispy texture. This dish is very satisfying, both as a side or a main dish served over rice or noodles. You can easily substitute the chicken for tofu, making this dish vegan.

Thanks Josh! It’s an Orange Cayenne. Not that hot. If you make this, use Thai peppers. They add the perfect amount of heat!

Why the sugar?

It’s to balance out the saltiness from the sauces. It adds to the umami of the dish. You can omit it if you’d prefer.

Very tasty! I like to use eggplant in it because it absorbs the garlic sauce and it’s soooo good! Please give it a try once. You won’t be disappointed!
