    A little correction to your statement on making sauerkraut. I have been making it for years. It is definitely NOT a smelly or messy process. And the upside is it has many times the probiotics that are in store bought kraut. It takes only about 5-10 days to bring a half gallon jar up to the tase most people I know like. It does take a little work, but it is well worth it.

      I make kraut in jars too. I agree. One thing to remember is quality cabbage makes quality kraut. Super sustainably maintained soil and picking after a good all night rain equals higher nutrient and soil microbe levels will go into kraut.
      Also keep in mind the microbes break down the cells structure in the kraut to make the vitamins and mineral more easily absorbed by the human cells. And the probiotics survive the stomach acids as they are hidden within the kraut structure, therefore it’s much better than swallowing probiotics in capsule form.

    Native German here. I rinse my Sauerkraut, add 1/2 apple, 1 smoked ham hog, some pork belly, caraway seeds, some water and cook for 1 hour, turns out great in Instapot. Caraway seed take any gas issue and gives it a pleasant flavor.
    Last but not least:
    What do you call a grouchy German?
    A sauerkraut! ✌️

    As a child, I remember my mom buying a can of sauerkraut and rinsing it so it wouldn’t be so sour. When I started keto, I looked at the ingredients list. With that being said, I have found the inexpensive kraut is not fermented but has vinegar added. Buy the good brand, it is fermented and therefore, a lot, better for you and better tasting.

      Your mom would have been a fan of white kimchi. It's made without the pepper, popular with kids and older folks who don't want the wild, delicious ride that is regular kimchi.

      @@darkpatches LOL, “older folks”. I’m 66 and I love hot food and regular kimchi. But then again, I was raise on hot peppers. I grow my own habanero and ghost peppers and eat regularly. Never heard of the white kimchi. I’ll have to research that. Thanks

    I love Pesto, Sauerkraut & Kimchee and hemp hearts! I often put sauerkraut in my salad to mix it up a bit. I hadn’t thought of Alfredo sauce - good idea!

    Many years ago I went to a restaurant and got hooked on their Corsican Steak. It was simply a strip steak with a layer of pesto and a roasted red pepper on top. Over the years I have done this to chicken as well!

    Kraut tips: add mustard makes it yummier, or add homemade salad dressing, we add kraut to a salad of muffuletta, avocado and feta cubes, mini tomatoes, hemp seeds.

    You are absolutely right about the difficulties with sour because of sugar. I have experienced that myself and am now craving and eating sour, which never appealed to me before - even apple cider vinegar now tastes like a lemonade to me :-)

    A really good add to your list would be shirataki, yam noodles. They are a great substitute for spaghetti noodles for a keto diet. Very low calories and just 2 carbs and ZERO NET CARBS per serving.
    They pair very well with Alfredo Sauce. And, for the creative you might try adding them to chicken and stock for keto chicken noodle soup.

    Almost always have sauerkraut with pork. Its what we always had growing up at home. And sometimes have it when visiting my parents. I just recently started buying it myself and I usually toss in some fresh broccoli, cauliflower and or Brussels sprouts to steam with the sauerkraut. Yummy.
    I'll be adding some of the other items to my shopping list to add some variety to the routine. Thx.

    Anything with Hemp causes me to have an allergic reaction like some do to peanuts....It took me a few times of eating it to figure out what was making me so sick. Every time I ate it my reaction was much more intense. Thank goodness we finally figured it out. Now we read ingredients for anything new that I try. I’m sure it’s wonderful if you’re not allergic to it but just an fyi....

    Good info as always, thank you. I eat a lot of broccoli and it never occurred to me to try Alfredo sauce. I like melting bacon fat over the broccoli and salting to taste. Another big benefit of sauerkraut is that it's high in vitamin C. Kimchi can be tricky as there is a wide spectrum of quality. Like you I enjoy the very hot Kimchi. For whatever reason many lesser spiced Kimchi brands have an unpleasant aroma. Am a pesto newbie, but will definitely try it!

    I love my wild caught salmon cooked in my air fryer. I use it mostly to make salmon salad with avocado ,olive oil mayonnaise ,Cucumber, red bell pepper ,celery ,pickles, pickles juice and too many spices to lust lol

    Thanks DR. Becky, another great video. I was heading for Type 2 diabetes and cut back on the majority of processed sugars while doing my best to also cut back on natural sugars and as you mention in the video our taste buds start to welcome other foods. I now enjoy fermented (not fermented in alcohol) foods and really enjoy fermented Sauerkraut and Cucumbers. When the cucumbers are finished I end up drinking the juice to improve my immune system to enhance my good gut bacteria. thanks again, have a nice day.

    A tasty use of hemp seeds is a tablespoon or two of them in the pit space on 1/2 an avocado. A little olive oil drizzle and it’s a tasty treat/meal.

    There is an Organic probiotic raw brand called Wildbrine and it has no vinegar, which takes out the bitterness and it comes in Garlic flavored as well. I never was a fan of Kraut, until I tried this brand.

    I just love your videos. I love sauerkraut and make my own alfredo sauce. The sauce goes well on Spaghetti squash, brussel sprouts and shrimp. Thank you for your insights. Am doing the intermittent fasting - surprisingly I haven't had any cravings and I've been doing the diet for 10 days. Only lost 8lbs but I'm excited about how well I feel!

    Dr. Becky... here is a suggestion. I have been on keto for 18 months and vow never to go back! My new go to for flavor is Chipotle peppers in adobo sauce. You can buy them in the ethnic food section or make your own. They are smoked jalapeño peppers in adobo sauce. Put them on top of a pork roast in your slow cooker. Put them on chicken. You will learn to love them. Low in carbs and I think they speed up your metabolism!!!

    Sauerkraut is great! Love it! It's a wonderful probiotic! Sometimes I eat it as an entre. Or mix it in my sallad. I never heard of Alfredo sauce. 😅

    Its super easy to make your own kimchi and sauerkraut and its way better then store bought. I ordered a clay pot that's made for making this stuff off of amazon and make it myself all the time. Its supre cheap and super easy to do and you can make it as strong or weak as you prefer based on how long you let it ferment. Watch some youtube videos about it.

    ...good to know; I include or hide ‘hemp’ seeds in my protein shake; kinda easy to make homemade SK - you can control the salt; store bought SK can be very high in salt.

      Amen to that I have trying to eat kimchee and sauerkraut and the ones I co.e across is very high in sodium. The amount eaten ia about a tablespoon or two and the sodium is high.

    I'm late to this, but it's important to eat kraft that is fermented and not pickled. Most canned or jarred Krauss are picked (and the canning process kills off any bacterial benefits). Check the cold case for fermented kraut!

      What I came here to post: supermarket kraut has preservatives added, so dead bacteria. Supermarket kimchi is heat-canned, so equally dead bacteria. If you ferment your own (I do) eat it raw for the benefits. Fermenting your own is a bigger deal than purchasing at the store, but not hard; lots of info online.

    Hemp seeds make my throat itch and swell, I use flax and chia though. Seems to work in most of my recipes

    I have to stay away from a lot of salt like sour kraut etc but the pesto is a great idea to flavor foods. If you are only doing a small amount that would be good. I've shunned it in the past because it's so high in calories.

    I saw your low carb video 2 years ago and lost 7kg and stayed in a IMC 23 since then. Thank you. Just a little doubt, sometime I ate carbs an doesn't gain weight?

    Sauerkraut is excellent as a salad topper
