South Indian Medu Vada without Using Machine | Authentic Kerala recipes in Hindi

  • How to make authentic, tasty Medu Vada (in Hindi)? Hi Friends, Today, I am going to showing you Authentic Kerala's Ek dum authentic south Indian Medu Vada recipe in Hindi. This recipe you can make without using any kind of vada making machine. People usually fail to make this recipe, but if you follow my steps and tips, you will make perfect authentic soft, crispy, and tasty Medu Vada.
    Ingredients for authentic south Indian Medu vada
    Urad Dal - 1 Cup
    Salt to Taste
    Sambar Powder - 1 teaspoon
    Curry Leaves - 2 Leaves
    Hing(Asafoetida) - Half teaspoon
    Black Pepper Powder - Half tablespoon
    Fenugreek Seed Powder (Methi Powder) - Half Teaspoon
    Red Chilli Powder - 1 tablespoon
    Chopped Ginger - 20 g
    Chopped Green Chilli - 2 Nos
    Chopped Onion - 50 g
    Six Tips for Perfect and South Indian Medu Vada.
    1. Make it slightly Coarse, Do not grind it a very fine paste, It will help to make Medu Vada crispy
    2. Add sambar masala and Methi powder for an authentic taste, and methi helps to better fermentation.
    3. Mix with hand at least 10 minutes once we add all masalas. This technique will help to soft Medu Vada even helps to authentic taste.
    4. Add Hing powder and mix it well with batter before frying Medu Vada
    5. Apply water on palm to make the shape of Medu vada. Water will help to avoid batter sticking with hand.
    6. If your batter is too loose. You can add 2 to 3 tablespoon rice flour according to your quantity and mix it well until your dough is tight.

    Anyone out there want to try medu vada for long time...guys this is an ultimate recipe....I skipped onion part and reduced on fermentation by few hours....it was just amazing...soft on inside and crisp outside... everyone in my family just loved them 😋😋😋

    Tried this recipe today. Vada came out awesome. I added onion after fermentation. Though I couldn't get vada shape but taste was authentic. Those who are trying first time, ensure do not add excess water while grinding urad dal otherwise you will not get vada shape.
