I’ve been using a binder for at least ten plus years. It has more benefits then just binding. Good all around basic’s. Your smoker is who is in charge. Once you figure it and the basics it hard to mess up with a binder.

Great video! Quick question on finishing sous vide. You mentioned that you vacuum seal sausage before putting in sous vide. Really like that idea. How do you monitor internal temp of the sausage with the packaging over the sausage. Thanks

What if you set snack sticks on pink butcher paper for the first 1.5 hrs in smoker and then wrap up till finished in the smoker for humidity?

Great informative video.
I do have several questions.
1) the store bought chubbies are nice and tight. Mine are all pruny and wrinkly.
Why is that?.
2) my chubbies fill with liquid. Easily 20%. Really makes a mess. Is it okay to poke holes in to them before cooking?
3) when stuffing a low water meat my plunger seal blows out 10x per session.
4) my electric smoker won't smoke in the summer. If it's freezing out it smoke like hell. Any suggestions?
