Thank you for posting this recipe!! This truly is the BEST CARROT CAKE EVER!!! I baked it for a loved one special birthday. I made a few tweaks - omitted the lemon juice, used half the salt, used half soft mascovado & half granulated sugar, added a hand full of sultanas, baked in a slightly smaller dish to get a deeper cake. The results were delicious!!! Everyone loved and raved about it!!
OMG IT WAS SO GOOD THE ICING WAS AMAZING! I COULDN'T STOP EATING IT! We beat the cream cheese icing for so long it became white, 100% creamy, and SO AIRY!
I can honestly say that this is actually the BEST carrot cake recipe. I am not a brilliant baker, however this cake has now become my signature cake. My friends and family are always asking me to bake this. Try this...it WILL NOT fail you. Thank you so much for your videos!

I made your recipe, and really enjoyed the cake, I added pecans and a lot of chocolate chips, adding the lime to the frosting was a great idea, crazy how it made it tangy, but with just natural ingredients. Cheers from San Diego!

I divided the ingredients by 2 (everything half) because only me and my husband eat it, so it turned out very very well too.

you can put less sugar and less eggs if you want it will still turn out great!! I used only 1 cup of sugar and 2 eggs and it was amazing! Carrots are already sweet anyway

I have tried this recipe twice so far and it was a hit! Super moist and flavorful. I added crushed pineapple, golden raisins, pecan and walnut pieces.
