Ingredients:
2 eggs
100g dark brown sugar
75g granulated sugar
50ml buttermilk
175ml vegetable oil
230g plain flour
½tsp baking powder
½tsp bicarbonate of soda
1tsp cinnamon
½tsp nutmeg
¼tsp salt
220g carrot, grated
100g raisins
Cream cheese icing
1) Preheat your oven to 180°C/ Gas Mark 4/ 160°C (fan)
2) Add the eggs, sugar, buttermilk and vegetable oil to a bowl and whisk until smooth.
3) Sift in the flour, baking powder, bicarbonate of soda, cinnamon, nutmeg and salt and mix until just combined.
4) Add the carrot and raisins and stir them in.
5) Scoop the mix into a lined loaf tin.
6) Bake for 55-60 minutes and let it cool.
7) Pipe cream cheese icing on the top.
8) Enjoy!

Yes please, icing looks yummy
its just cream cheese (like philadelphia) with icing sugar
Softened butter, 1pk cream cheese, 4 cups sugar, dash of vanilla
OR
Powdered sugar, 1pk cream cheese and heavy cream

I made this for my math teacher’s birthday and he gave me 10 points of estar credits on one of my low grades because of my effort of making the cake and decorating his classroom for his birthday 🎂
