I stay in the UK and I am at the half stage of building my smoke house.
I have the foundations built for the fire pit and the smoker.
Hopefully within the next few weeks I will have it finished off and have a video uploaded showing it in action

I've seen a lot of home built smoke houses by people that thought they knew what they were doing but this is the very best one of them all. This one is the most efficient and best thought out one I have seen yet. Great job John. Do you have the plans for this one and do you sell them? You done good...........

Was regular mortar used in the firebox, or do you have to use something special? I think this is an awesome design.

Have you had a chance to hot smoke something in your smoke house yet? How high of a temp have you reached?
can you paint the outside of it to help the wood from rotting faster or will that hurt the meat

Do you have a complete parts list?
Just a observation but is the brace on the door the wrong way, should it not be at the top, lock side, down to bottom hinge side (I made this mistake). Still a very nice smoke house. Do you use any other wood for smoking.

most important info for a cook would be the temperatures! so after you put two thermometers in, what temps did you obtain?
Remember.....this is a COLD smoker. The temperature should rarely go above 90. That's why the firebox is away from the house.

Was the lowest area able to get hot enough to slow-cook meat? Have to temped the various levels yet? If so what are your readings?

Are there issues with critters getting in there, or does the smoke keep them out? I heard smoking has to happen during cool weather to keep meat from rotting. Sound right? Where did you get the fire pit access cover? Thanks.

How do you control the temperature? And do you have any difficulty with keeping it regulated? Thinking about building one, but if temperature fluctuates a-lot i might just buy a commercial one.
This is a COLD smoker. Used for COLD smoking hams, bacon, sausage, fish, cheese, etc.
any advice on where to get those long interlocking cedar boards and high heat tiles? I went to Lowe's and they looked at me like I was crazy :(
+charlie marrero I went to Home Depot for my interlocking siding. It was called Knotty Pattern Board. We call it "bead board". It's made of pine. I found fire brick at White Jones and Ace Hardware. I had to order my chimney cleanout door from Ace online, and for my flue liner, I used 4 cinder blocks joined with mortar and laid in concrete.

+Charlie Marrero Hardware and sporting goods. The split fire brick comes in boxes of 6. It's kind of expensive. You could do the entire fire box in full size fire brick for roughly the same price.
Now that you have had some use, what would you change?
It works really well! I can't think of anything I would change. Getting ready to smoke some sausages!

How hot have you been able to get and maintain inside the smokehouse?
This is a cold smoker....for most things I want the temperature in the 80's or 90's.....
What temp were you able to get it to and hold it to while smoking? Were you able to say this is a cold smoker and hot smoker?
