I was today years old when I learned that I could spray a measuring cup with nonstick cooking spray so molasses won’t stick. So simple and duh and I’m feeling a little stupid lol
Even easier tactic is to use a Japanese kitchen scale that measures 0.1 grams!
even easier to just weigh it
Just spray it over your sink, not all over your kitchen
Even easier to make a hole in the dry ingredients by placing the cup and filling it with the molasses
Not for these, but if there's oil in your recipe, just measure that before any sticky ingredients. The oil residue will work the same magic -- no precision spraying required.

I made this cookie. They are good, really good. My first attempt they came out crunchy, but the flavor was so good. I have to reattempt. My second attempt, I thought, wow, this could be my new favorite cookie. They were perfect. Crunchy on the outside. So soft on the inside. Brought them to a party. Noticed people snatching them up! Rave reviews. This recipe goes into my must make ever year.
What did you do differently between the two attempts to get the difference in crunchiness?

Also, if you do the cooking spray/measuring cup thing, please spray over the sink. Otherwise whatever doesn’t land in the measuring cup will be on your floor or counter.

Love this channel. Ok it's cause you are great on camera .Binge watching cookie making .Thank god I don't have what i would need to make these cookies , lol Hope you mop that floor .Tip. to avoid waiting to cool, dip in milk or eggnog.
Baking these today & the molasses measurement is way off. Recipe states 1/4 cup or 158g molasses. I was measuring it out in grams & it seemed like way too much, so I watched this video again so guage how much was used, & saw they used the 1/4 cup measurement. Poured my 158g molasses into a 1/4 cup measure & I had rons of extra molasses. So just a warning to anyone baking these, use the cup not the gram measurement for the molasses. Now I'm unsure about the accuracy of all the weighted measurements for these cookies... NYT, please update this recipe.
Had similar experience with my instant espresso powder. Same one Vaughn is using but I filled my 1/4c and was not close to 22g
Something is definitely off with the ingredients…my batter came together very thick and dry-like playdoh. Double checked my work and nothing is off on my end. But my cookie dough looks nothing like in the video, his is loose and runny. Not sure how he got his to look like that…

Agree! These were terrible. The only positive comments here are people who WANT to make them. People who ACTUALLY made them are in the same boat as us. Not great.

I'd love to make these! Can anyone tell me what espresso powder is? I have instant coffee granules and I have ground coffee beans but I'm not sure if either of these is right?
instant coffee is a decent substitute, it's just not as potent and a little less tasty. Just use 50% more.
you can find it in a jar at the grocery store near the coffee. it looks like instant coffee granules.
It looks like he is using Medaglia d'Oro which is an instant espresso powder. Cafe Bustelo and Illy are other brands of differing qualities. You are probably fine with the instant granules since I think those would dissolve well. They might not be as strong in flavor as the espresso powders. The coffee grounds might not dissolve so well and they might be to granular, depending on which grind you had set them on.

The cooking spray trick is good but I usually just measure the fat in the same cup first or pour a smidge of oil in and rub it around.
