SALMON BURGER RECIPE
yogurt dill sauce:
1/2 cup plain non-fat Greek yogurt
1 clove garlic crushed
2 tbsp chopped dill
2 tbsp lemon juice
salt and pepper to taste
salmon burgers:
15 ounces can of wild salmon*
1/4 cup diced red onion
1/4 cup diced red pepper
1/4 cup chopped dill packed
Zest from one lemon
1/4 cup lemon juice
1 egg or 3 egg whites
1/3 cup oat flour
1/4 tsp cayenne pepper
salt and pepper to taste
for serving:
arugula
4 whole grain or sprouted buns
Creamy Dill Sauce
Combine all ingredients for dill sauce in a small bowl. Season with salt and pepper and set aside.
Salmon Burger
Combine salmon, onion, red pepper, dill, lemon zest, lemon juice, egg, and oat flour in a large bowl. Season with cayenne pepper, salt and pepper.
Use your hands to shape four burger patties (your burgers should be about four ounces each).
Heat a large non-stick pan over medium heat and cook the burgers for four minutes on each side or until browned and crisp on the edges and heated all the way through.
While your burger is cooking, toast up your English muffins and layer the bottom half of each with a handful of arugula.
Place cooked salmon burger on top of the arugula then top with 2 tbsp of dill sauce before popping on the lid. Enjoy!

Can dry dill be used,and how much would I use ? Years ago I made a salmon recipe with mashed potatoes and mustard and I think garlic,it was good,my neighbor makes a cheese sauce for her salmon burgers.

I made these for dinner tonight and they were amazing! My boyfriend's mum has a lot of allergies and we often have to tweak recipes for the three of us to be able to eat the same meal. But this didn't require any tweaks and tasted amazing! Definitely a new healthy meal staple for my roster!

Dani, thanks for the recipe. A couple of things: 1, I've been eating canned salmon for the better part of 60 years, usually just out the can with onions and some apple cider vinegar (I'm easy to please). So I tried this recipe and am delighted. The flavor is wonderful. Somehow I messed it up a little, didn't have oat flour so I used almond, decided to use 3 whole eggs instead of just the whites. Sadly, it was a very . . . fluid mixture. I had to be very careful in cooking them not to break them up completely, 2, my wife doesn't like salmon, snuck these on her when she returned from teaching just a few minutes ago and she ate 1 1/2 patties and told me how good they were. It made my day, so thanks again,

Oh ya, I guess you didn't see that the recipe calls for one egg or three egg whites. I imagine it was fluidy but sounds like you managed to make them anyways.

Yeah, those salmon bones!!! My mother would take them out and let my brother and I eat them, and I still do today, and I am 75 years old! When I open a can of salmon, I pick the bones out and have a memory feast, bless my mom, she was the best! I really like the idea of salmon burgers, just always made patties and never gave it a thought to use a bun! Will have to do this soon!!

Hi .. Thanks so much for this great recipe.. really great change for me to just eating the canned salmon not in burger form. I used your recipe , mixed the ingredients with a fork , started with the egg and added all the rest with my seasoning of pepper, thyme, oregano and celery seed and then oiled a 6 cup muffin pan and I ended up with 5 burger muffies.. so good ! thanks!

Tried it, love it. Mine seemed a little wet and falling apart, but I managed to get them to hold the patty shape, baked for 10-15 min in my toaster oven, then they were gorgeous! Held together and fried as you suggested. Not my moms salmon patties but better and certainly healthier! Thank you! This is about the only way I like to eat salmon.

Dani, I have been following you for years and tonight I was stuck on what in the world to cook for my dinner. No meat thawed out but ..Oh I have some cans of wild caught salmon in my pantry. I followed your recipe and was so excited that it called for Oat flour! I didn't have a fresh lemon, but I did have a blood orange so I used that and what a great recipe!! OH and I used ghee to coat my pan. Wonderful recipe , thank you!
