So how was the bone situation? I always wondered how easy it was to clean then mostly I cut them up for flatheads, The drone footage was cool too

The fillets we got out of them were mostly bone free, but for the size of the fish you sure do get a small relatively thin fillet. Not a whole bunch of usable meat on there. We also did a V cut along the lateral line to remove the mud vein and any pin bones that were still there. Thanks for Watching

You should always bleed drum before putting them on ice. Cutting that section between the gills, like your cutting it's throat, cuts the main artery for the gills and then put them back in the water to bleed out. It's the blood and the fat between the skin and the meat that makes them taste bad. Get rid of both of those and any dark meat that you find and you'll have one of the best tasting fish you can get.

I tried one a few weeks ago after my daughter begged me to keep one she had caught. We both thought it was pretty good, similar to a white bass I thought. You get pretty much one long fillet off it, the belly meat didn't look that great and all of the fat (red stuff) I removed. I'd keep and eat one again.

They're a very greasy fish. Ill usually squeeze the fillets out under running cold water. Seems to help get rid of some of the fishy taste.
