How to make restaurant style Magic Bowl / Bol Renverse | Mauritian Recipe

  • Magic bowl is simply a saucy chicken stir fry loaded with vegetables. Also named as Upside down bowl, Bol Reversé or even Bol Deviré. With this step by step recipe you can make a restaurant style magic bowl at home.
    4 persons
    Ingredients:
    250g Basmati Rice
    300g Chicken Breast
    4 - 6 Tiger Shrimps
    4 Eggs
    125g Babycorn
    75g Shiitake Mushroom
    1 Carrot (medium)
    1 Onion (medium)
    2 Garlic Gloves
    5 - 6 Stems Choy Sum or any Asian green
    For the Sauce:
    2 tbsp Corn Starch
    2 tbsp Soy Sauce
    4 tbsp Oyster Sauce
    2 tbsp Cooking Wine
    2 tsp Sesame Oil
    1/2 tsp Pepper
    3 tbsp Vegetable oil
    300 ml Water
    Recipe Notes:
    Chicken: Using a sharp knife, slice the chicken cross wise across the grain into 1/4 inch strips. Slice across the grain for tender, consistent pieces. Do not cut into cubes otherwise it will take longer to cook.
    Chinese Wine is an essential in Chinese cooking, the secret to get a restaurant style magic bowl. But still if you are not using cooking wine, you can substitute with chicken broth.
    Soy Sauce : If you want the sauce to be darker, use 1 tbsp dark soy sauce instead of 2 tbsp light soy sauce.
    Chop choy sum : Trim the end and then cut into 7cm. Separate stems from leaves. You can use any other Asian green (Baby Pak choy)

      Hello.. no need since we are using soy sauce & oyster sauce which are high in sodium and it will too salty.. You can taste and then add salt as per taste if you want 🤗 Thanks for watching ❤

      Hi, no they are different. In this video we are using Shaoxing Wine (chinese cooking wine) and since it is made of brown rice and aged for an extremely long time, it has more flavour.

      Yes you can, some people in Mauritius are using the brand "Kwang Tung Mijiu" (transparent bottle with red label). However the brand may differs from other Chinese store but it is all the same 😊 .. local wine will do too!
