You about to make somebody’s dream come true, Truck and Bike you can’t go wrong, keep doing what you do.
The easy answer is do the cam first because it's quick and easy then do the bore kit if desired. A bore kit without a cam is self-defeating since stock cams have lobes cut to reduce emissions (the so called "Harley tax" is changing cam and fuel system tuning to suit along with an exhaust upgrade).

Thank you for telling us how much money you are investing in the bikes. I am almost ready to pull the trigger buying an S&S to make my 96 into a 110 and I see all the upgrades you do to the bikes and wondered what the dollar amount was to make it happen.
There is no replacement for displacement my man! Cubic inches will always be more powerful then what a cam will do to a smaller motor. Or at least it will always have the potential to be way more power
Color on the bags on the two tone bikes needs to be higher up. Looks good but on all the other parts are more 50/50 split. And bags are looking like 25/75 split. Just my own opinion

A chain conversion actually robs power. You don't need a chain conversion unless you're drag racing with 150+ torque. My Moonshine HP 131 puts out 162 HP/ 153 ft/lbs Tq and the belt is plenty strong.

I don’t know what a chain has to do with anything, it won’t change the feeling of the bike really. If you change the chain gear it might make the tq come on a little earlier but you can still pop wheelies with a belt.

@@EverythingsRegular Rode them with chains and without, it doesn't make much of a difference. Also adding a chain typically decreases your dyno numbers, thats a fact Ive seen with the studies Ive done.

And the chain conversion is not for performance gains - it's to stop snapping/frying belts under high torque.
The M8 has good bones. I would do some head work, cams & some intake work to match. Raise the compression with a good tune & exhaust & let her rip.

A good cam and throttle body should put you in the 130s - 140s with a good exhaust. If not you need a new tuner.
