    Every knife, no matter how good or expensive it is, will after some usage get dull and will need to be resharpened. Knife sharpening process might seem intimidating and difficult at first, but it really is not. All it takes is a little bit of practice and some patience. Everyone can learn how to sharpen a knife. The learning curve is not steep, and with a some practice, you will learn to always keep your knives in good shape.

    I'm really pleased with this! It works like a charm czcams.com/users/postUgkxDcr-y2Pf6xdnrFHrSP7dl9kpKaCozcSQ Takes less time than my old electric sharpener because it can take more off the knife faster, and then it smooths out nicely with the finer grit polisher. I don't know how long it will last before the grit wears away, but I wouldn't mind having to replace it every once in a while.

    I could have sharpened over 30 knives in the time it took to watch this video. 20 seconds per knife). I use the tip of a nail to feel for nicks and burrs to save my manicure. I use thin, crisp paper to determine sharpness. Good video, 2 thumbs up!

      Yeah, we've heard that before 😊. For some it's indeed not pleasant to watch, but the fact is that according to our experience, the nail test is the best indicator of the lever of burr/sharpness. There are many other ways to test for it, so go ahead and see if any of those work for you! Cheers! ✌️

    Verify informative video. Been sharpening for a few years myself but just picked up my first Japanese knives. I've never sharpened western knives asymmetrical (60/40 70/30) I'm guessing. Not a fan of the angle guide myself but for beginners it will be useful. I'm looking forward to the advances video

      @@SharpEdgeshop Smith's dual grit combination sharpening stone. Time for an upgrade perhaps? Question, is there any reason to use honing solution vs. water?

      ​@@robertlester4569 If the stone is still thick enough and you like the quality of the stone then no need for an upgrade. You can however add more fine/coarse stone to your collection if needed. Honing solutions usually include some rust protector and stone cleaning agents. We just use old plain water, it works the best for us 😀

    I love cooking and the outdoors, also collect knives, so have become fairly adept at sharpening knives of various kinds - through trial and error, and some scratched up knives along the way. I really wish I watched this vid when I started out, it really covers the basics and concepts excellently - it would have saved me a ton of time and pain along the way. Plenty of sharpening vids out there, but this presents the basics very well and explains some of the key concepts and principles you need to know, without an hour lecture. Only thing I thought could do with is a strop section, as it usually my go to method for more frequent maintenance and used more than my stones. Highly recommended for those starting their sharpening journey, really will fast track your technique and process. 5 thumbs up SharpEdge!

    Thank you very much for making this knife sharpening tutorial, I appreciate it, and learned something I can use. I'm first and foremost a student of sharpening, and always looking to make improvements. The bulk of my sharpening experience is with the Tormek sharpening system, with German steel knives. I'm just now getting into Japanese knives, and using Japanese water stones for sharpening, and getting the basics down first is what is most important to me at this present time.

    I used to have no trouble working up an edge without a problem - when I was a kid. No more. But this sounds so good it makes me fer sure sicker than hell's best bituminous. Soon as I get my knives back, I'll you know how it comes out!

After watching over a dozen knife sharpening videos on here, I was starting to think I could make a decent sharpening video - and that is a scary thought!     To Sharp Edge: This is highly technical and more involved than I thought. Maybe this is the reason my scissors are not satisfyingly sharp: I had researched, watched other videos, believing the tools I have, would suffice. I wanted to get that razor-thin blade type of cut.
    Question: What do you think of those automatic belt sharpeners in the marketplace?

      Thanks Eddy, we're glad to hear you liked our guide! I hope your scissors got the edge that they deserve! Belt sharpeners produce a lot of friction and heat during sharpening, so they are not the best choice for Japanese knives, as the chemical structure of the steel can change due to the heat which can make the knife more brittle. Water stones are better because water insulates the heat.

    This knife sharpening video is simply the best,and most informative I've had the pleasure to watch!
    I have been sharpening my own knives in a similar fashion and those of friends for many years, and I have often watched many such videos on CZcams.
    This video is by far the best and most informative ever.
    It is my opinion this is the best knife hand sharpening video on CZcams
    You've even explained simply and in detail, what might look obvious to some. however, for some I'm sure many people don't realise these are a necessary and essential steps.
    (If somebody doesn't understand what I mean, then it's better that you play this video again and listen very carefully to the words.)
    I love your technique and your patience shows.
    You taught me some interesting and helpful nuances today.
    For that Luka and Cedo, I thank you sincerely.
    By the way, the accent of your voice man is so good tool.
    PS: I must admit though that like few other comments here, I found watching the knife running over his finger nail gave me an unpleasant sensation.
    So I tried it myself, and now I no longer get that sensation. Thanks again.

      We understand that the nail test makes some people uneasy, it's not a very common thing to do with the knife, but we're glad that you gave it a try! It's all we ask for, to try it and see if it works for you :) While it might seem intimidating in the first place, once you try it, it's not a big deal. Plus, it's the best way (at least for us) to try for burr levels. All the best!

      @@darrensomerton2405 Our best advice would be practice, practice and once again practice. Try to sharpen as many knives as possible. That way you will encounter different profiles and different shapes and different materials and will become a better sharpener for it. Try to watch as many online sharpening videos, Instagram posts and websites on tips on how to sharpen the knife. Ask if you have any questions, usually the knife community is very helpful. 😉

    The nail test works well with dull knifes but when you have a hair splitting edge you will cut trough your nail easily the paper test is way better and safer to determine sharpness

      We notice that when the knife is sharp and completely polished, it slides on the nail easily, without any resistance. We've never cut through our nails, but you indeed got to be careful and apply almost no pressure.. The paper test is also a good option, but to really "feel" the sharpness, for us the nail test still works better.

    The fingernail test is a really great way to feel the edge of your knife. But i recommend dragging the tip of your nail along the edge rather than sliding the edge along the top of your nail. I feel you get a much better sense of the edge that way

    I think they just love showing that burr test over and over! When I learned to sharpen a knife in boy scouts over 50 years ago we learned how to check sharpness by only resting the knife edge against a nail on an angle and seeing that it didn't slide off if it was sharp. We'd never thought of actually drawing the knife across our nail, that was creeping me out here!!

    This was just awesome! I have all the sharpening tools here to get going. One stupid question is how long should I be working on one side of the blade before working on the other? I did a practice run and was pissed with my result. Your guide is fantastic though.

      Thanks Jason! My baseball coach always said there are no stupid questions! ;) Unfortunately I cannot give you a concrete answer because it depends on so many factors (like the condition of the edge on your knife, which steel is it made of, how much pressure you apply, etc). I'd recommend that the number of strokes on each side should be equal. Do 20 strokes on one side, then 20 on the other, see the result (nail test), then repeat. It also depends on the granulation of the stone - with which stone did you start with? If the granulation is too high, you won't get very far..

    The carrot-tongue sharpness test is something new for me, after watching a lot of sharpening videos!
    And the fact that the nail test doesn't have to "catch" when the knife is sharp (only if there is a burr) is also new to me, although i saw the nail test before - I understood it wrong up until seeing this video. Thanks!

    Another important thing I would like to mention is a flattening stone to keep the water stone flat. Even if you (the one sharpening the knife) don’t think it’s recommended to do it always makes sure that the stone is always flat making the stone create a better edge and making the life of the stone that much longer. I have stones that cost anywhere from 26$ for a 1,000 grit up to 350$ for 30,000 grit. Even if your stones are cheap make sure you take care of them. To get a knife actually razor sharp you need an 8,000+ grit stone to pop the hair rather than pull it.

      That is also a great reminder! Flat stone makes the job much easier and as you said flat stone also creates a better edge! If you take good care of the knives you should also take good care of your sharpening stones 👍

      Thanks! Fingernail test is, according to our experience, the best way to feel the burr along blade's edge, but there are other methods to feel it too, so do what works best for you! As long as the knives are sharp and fingers intact, any method works fine :)
