  • Indonesia’s mie lethek noodles are called “ugly,” because of their dull grayish color when cooked. We visited a factory that still makes them using 2,000-year-old methods, one of only two left in the country. They’re competing with major instant noodle manufacturers, and are struggling to survive.

Foreigners might find this disgusting but this noodle is 3000 times more environmental friendly and healthier than mainstream factory noodles. Its gluten free, far less carb, no chemicals, such as preservatives, far less carbon footprint. Its local pride and many people loves this.

I tasted this noddle and I HATED it for few reasons : the taste was bad due bitter and rubbery (stir-fry method) since it was made from Cassava instead of Flour/Wheat, also the color was really ugly like you can eat "Bihun" but real Bihun (Vermicelli) itself still better than this noddle.
I have lots of Bihun and Mie Soa in my Food Storage for cooking weekly, Bihun usually cooked for rice substitution (made from rice flour) while Mie Soa for our family Birthday (Chinese Tradition).
I know this food is intended for low-income and poor people, but the way they make the noddle is the reason why people hate them (no offense at all).
If they can make this with better tool and machinery, it will be well-received because better Hygiene and Quality standard. Sure the price will be more expensive, but you have safe and better product.

It's a pity to see the workers feeling proud of their work and being covered by the media, but apparently in the perception of foreigner, they are looked down upon. However, this is the diversity of a culture. Hope all people can appreciate this.

Sapinya kerja tinggal dorong2, sisanya nyantai di kandang. Bodohlah.

Sama kayak kuliner jalanan india, di makan ama manusia, bgi org sana yg makan ya biasa aja, tpi bgi yg ga biasa ngeliatnya pasti bilangnya jorok. Udah, gitu aja kesimpulannya..

Maintaining heritage is not an excuse for the lack of cleanliness, and modernizing is not synonymous with the lost of traditional values either; just look at Japanese craftsmanship where they hit all the spots: traditional, immaculate, and with just the right amount of modern streamlining.
And they don’t have to do it alone, local government could help arrange for things like investment and training. A better branding and a more varied application to different dishes would encourage the younger generation to appreciate it.

From my observation, the one area I would try to improve on is the drying method, since the batch would get ruined when it rains, there should be a way to help cover them up and let them still dry without getting wet. Having improved gasket when they cook again would be a minor change I'd make to help keeping the steam in the oven.
