I'm new here. Researched 10 different Sriracha recipes this day, because like you, I prefer to make everything from home: 7 caucasian guys, 1 caucasian woman, and two Thai women. It is incredible the subtle differences of the process that I believe creates a world of difference in the end result. The other Thai was based in California, hence why I have decided to try your recipe and follow you here. I am not a noob in the kitchen, and prefer to be educated by indigenous chefs who live in the country of the food's origin. I wouldn't ask Gordon Ramsey to make me a Jamaican salt fish & ackee any more than I would ask Adrian Morris to make me a traditional sunday British roast with all the fixings. You get my drift. I respect what you're both doing and appreciate the natural and wholesome way you present yourselves. If only the world was this way. I wish you both the best in your endeavours and encourage you to keep at it. I will be watching your other videos and leaving honest feedback. Stay cool! 😎👍

The production of your channel is fantastic and your husband is talented. You are an awesome host and cook! If you don't mind me making a suggestion, I think the cooking videos can benefit from a little more explanation of ingredients and the exact measurements. I like eyeballing the measurements myself but many home cooks rely on exact measurements as they are not familiar with the ingredients. Cheers and keep up the great work! I love Thailand!
Thank you very much for these kind words 🙏 I always appreciate feedback. I get your point. However, the problem with making Thai food recipes is that unlike many other cuisines we generally don’t measure ingredients for the simple reason that shrimp paste, lime juice, palm sugar etc. taste different every time you buy it. Thai cooks smell and taste to adjust the balance each time we cook - one day we might for example use 1 lime, the next day 2 for the same recipe. I have measured exactly what we use when cooking traditionally and then I have based the recipes on a median amount of ingredients. There are as such no fail proof Thai recipes. To succeed the person cooking must at the very minimum have a baseline knowledge of how the dish should taste before cooking it in order to correctly adjust. As for the second part of your suggestion - explaining more in depth. We try to balance the length of the videos against view time data - and we cook in real time unlike most other CZcamsrs. We also only do one take so there isn’t time to give more explanation - it is also not our style to talk a lot about techniques and ingredients which is something we are planning to go much more into in a separate series of videos that will satisfy those interested acquiring the basics of balancing taste in thai cooking. When I saw the title of this post I was afraid that your were closing down this channel. For a long time I wanted to thank you for this channel and all the recipes. Before the pandemic I used to go to Thailand every few months. Now I was stuck outside of Thailand and your channel taught me how to cook truly authentic dishes which helped me have at least some of the feeling of Thailand while being stuck overseas. Thank you so much and please continue sharing with us your great food tips and recipes.
