how do you parry some thing you don't even see ?
Practice and listening to enemy sounds. You will always hear crossbow being fired. So just time it right and you would parry. Also the crossbow guys are usually in one place in village that is on top of houses. Secondly, enemy most of the time say something before attacking. You just have to know their attack pattern. The pitchfork guys 9/10 times always running towards you.
