It is a sign of the times that make many a heart yearn for the scenes of a simple life: color that paints the plants, fruited flowers that feed, sons and daughters that listen, and a grateful heart that thanks their Creator.

Your intro was so hauntingly beautiful, bringing back suppressed childhood memories of the crickets, cicadas, and tree frogs singing in perfect harmony outside of my bedroom with windows raised. We did not have AC back then and would listen to the woods sounds to put us to sleep while waiting for each gust of breeze to cancel a portion of the heat the house held from the day sun.

For me, there is no better life. Where the old ways still rule, people still respect their elders, show common courtesy to others, "honor thy father and mother", and you get backhanded away from the table for not cleaning off the molasses knife before sticking it in the butter when "makin up a sop". Now Miss Tipper, you know that neighbor done growed them ears. Don't correct you're Appalachianisms... LOL! ;o) That's why we're here!

Only part of our dinner will be "celebrating Texas" this evening (but I am cooking it while I write this. Summer yellow squash, a Texas staple during this time of year, but it isn't specific to the state, just my wife and I love it. Cooked with about half a yellow onion, a few garlic cloves, tomato paste all sauteed in about 2 TBSs each of olive oil and butter. Then the squash and then about half a can of diced tomatoes, salt and pepper and about half a cup of water. No idea if will be good, making it up as I go along, but I think it will. It already smells good. Mexican rice as the starch (that certainly goes well in Texas) and the non-Texas thing, a couple of cod fillets. I'm the retired one in the house, so I try to make dinner when I can, because my wife is still working for a living. Thanks as always for sharing y'all's vignettes of life in Appalachia!

I love biscuits and gravity! I get odd looks sometimes when I eat them though because I put sugar on them. Sometimes called Okie Puddin'. It takes a surprising amount is sugar before they start to taste sweet.
I like to BBQ corn on the cob. I soak the in ice water over night or at least a few hours. Then pull back the husk and remove the silk. Add butter, salt, and whatever else you like. Pull a strong off the husk and use it to tie the husks closed. Toss 'em on the BBQ.

Tipper, thank you so much for showing the world how truly captivating Appalachia really is. My favorite sound is night sounds, but due to the times in which we live I do not leave my window up at night. I so enjoy them when I forget to go to the mailbox and have to go at night. Somehow they are not as deafening nor quite as beautiful as they seemed when I heard them growing up. Matt is so talented and is sure a jack of all trades. I learned this following your blog through the years.

My corn shucks go into large brown compost bags, picked up by city and composted in large, very large rows at the municipal landfill. You can go and get all you want. Also they chip all wood in the municipal area and you can get free chips. It’s great they don’t just bury it like they used too, or incinerate anymore. Costs us a little in taxes but I think worth it

It wasn't quite how I was raised to accept flowers, so I was a bit taken aback, but they were a beautiful shade of mauve none the less, and looked beautiful in my vase. They grow wild where I live in BC. It was a romance that didn't work out, so maybe the roots were telling.😅

Not long ago, my husband entertained friends who have been city dwellers for years. Their families left farm life when our guests were in high school, which eventually led to their getting together. Their visit lasted well into the evening and after supper we retired to our screened in porch. On the farm we take for granted sights and sounds of the country. Our guests commented that they had not heard crickets and tree frogs in years. Today, I am thankful for the wonders of farm life. We have grown rattlesnake beans for years-delicious!

We shucked our corn on the back porch. Put down a sheet to sling the shucks on. My grandmother always had quilting bees, however you spell it. They were big affairs. She made quilts for the whole family. My mother made most of our clothes when we were little. We ate squirrels and rabbits regular also quail.

Happiest time of my life was in rural Arkansas. Country is actually like U showed, quite loud. Peepers crickets, your accent home canned food, Southern cooking** okra, green tomatoes, cornbread and biscuits swimming holes, riding our mule ( old Jeff) , playing guitar with our friends, home brew beer and soda pop, home raised pork, chickens and ducks, the wonderful spring water chopping wood forheat, cooking on the wood stove. . almost 45 years ago and I still dream of those days.

Nice one to watch just before heading to work… peaceful. I like Matt’s hat towards the end, I’ve got a few similar to that I like to wear if not wearing a ball cap and they wear really good! Got to put up some silver queen myself when I get off today! Pretty vegetables and pretty fiddle and guitar music at the end!
