HOW TO CURE A MOLCAJETE | Step By Step ❤

  • The MOLCAJETE and TEJOLOTE is the traditional Mexican version of the mortar and pestle, and it is a basic kitchen utensil in my home. I have owned one since I was 21 years old, my mom gave me one as a gift, and I still have it and use it to this day. If you are familiar with my style of cooking than you know I use it when preparing most of my dishes. Nothing achieves the same flavor and consistency as the molcajete does and that's why I love it. Molcajetes have been around for thousands of years, and some of the sweetest memories I keep in my heart are of the grinding sound of the molcajete coming from the kitchen when my mom was preparing our delicious meals and now those are the same sounds in my kitchen. Curing the molcajete and tejolote is an important process before using it, once you get the hang of it you will see that nothing compares to it.

    Thank you Rachel! I have a molcajete that my parents bought in Mexico 50+ years ago but we never knew how to season it so we just used it for decor. NOW I can season it and use it!

    Thank you Rachel for taking the time to explain how to season a molcajete. I got one a few years ago and just forgot about it. As a kid I was too "busy"to learn from my mother or actually I was dumb thinking I was too "cool" to learn. Then my beautiful mother died suddenly when still a teenager. I learned basic things to cook just to get by.
    Now, I watch your videos. Thank you so much for helping and teaching us.

    Hello, Rachel….its fate that this video came across my feed today. Inspired by your wonderful channel, I bought my first molcajete just like yours….and I didn’t even know I had to “cure” it! You saved me from a batch of gray guacamole! Thank you for your wonderful channel and your easy to follow instructions. So many of your techniques can be use making other recipes.     Just got my molcajete. After watching you cook so many authentic Mexican recipes, this was the first stop I made after reading the instructions. This is a labor of love and Rachel, you are right, be prepared to run it through the curing process five or six times. I’ve done it once today and IT IS A WORKOUT! To save my arm and hand, I intend to do it once a day for the next week. I’m in no hurry; my avos are ripening. One other thing; be sure to CURE BOTH ENDS of the tejolote as Rachel does. I think our hands will appreciate it in the long run.

    California. My Mom would cook enchiladas, soft tacos flour and corn tortillas. I had won my husband over by way of his tummy. Thank you for showing how to season the molcajeta, now I will be able to use mine. God bless you 😋

    I've been watching you since you began, and I've never been disappointed with your videos. I now have three molcajete's...They keep getting bigger, lol. You are absolutely right there are many ways to cure a molcajete and I've done a few, but your method is the best and the most sensible. It took me 6 cleanings before my latest molcajete was cured, I guess the bigger they are the longer it takes. You are the best!

    Thanks for showing step by step, the less glamorous aspects of what is required in a good kitchen. This is a valuable skill to know, and anyone who wants to add a Molcajete to their kitchen arsenal can prepare this item for safe use. Even if you are not sure you would use a Molcajete to grind spices, it is an attractive table decoration to display fresh fruits or other foodstuffs. With your common use of recipes that use the Molcajete, I am completely confident in your endorsement of using the dishwasher for a deep cleaning. I would not have known this otherwise. All excellent info for the home cook. Great presentation.

      I hope it'll work out for you my friend, I did mention that I don't always put it in the dishwasher only when I can't clean it myself with a brush. Some people use brushes without soap, and that's totally up to you, sometimes I use the brush without the soap as well.❤👍

    I finally got up the nerve to buy one. It came with lg holes in the bowl and outside. Called seller and he didn't even want it back. Ordered another and it came so nice!     I was given a molcajete from a volunteer that I worked with at a nursinghome, she had gotten it from Mexico years and years ago and didnt use it anymore and knew i loved to cook.. It's sat up in my cupboard because I wasn't sure how to clean it properly. Now I know! Thank you!

    Ty Rachel. My 29 yr old son just came over and said I want a Mocajete! Lol
    Of course the smell in the house when he came over sparked his desire for one. With cubed pork tenderloin in the crockpot, with garlic, onion, chipolte peppers and fire rosted pablono peppers that your taught me how to make. Plus pinto's simmering for refried beans, and Mexican rice. I got my garlic, onion, jalapeños, and plum tomatos roasted in my cast iron ready for salsa. So of course I shared this video with him. And just know that when I need some questions answered for a mexican dish I want to make I come straight to you because you have all the answers. BTW I'm learning to cook with dried chili's thanks to your Dried Chili's 101, step by step video. You did that Rachel. Ty dear. Love and blessings.

    Aha! Finally an explanation of what curing a molcajete means. A better English word here would be "conditioning".
    Everyone uses the same things, rice and coarse salt, but nothing they said made sense. So now Dona Rachel explains what happens. Very good, thank you.

    Thank you so much for your channel. Your the grandmother of many generations passing down the old generations knowledge to the new. So many of the old recipes have been lost. Im 70 and so appreciate your channel! Recipes past down in my head are being forgotten. I never wrote them down because I remembered by doing. With all the years of travel and being away from unable to find ingredients or supplies I learned to eat other dishes. Your channel renewed my heart. Im again making some of my comfort foods like I remembered perfectly - your recipes! I do hope an opportunity will come where you are able to pass these down in a recipe book. You are such a treasure of traditions. We’ve become so multi cultured in many ways, which is good,!but not at the expense of losing these passed traditional recipes our grandparents and aunts traditionally passed in the warmth of the kitchen. May your channel bless and renew a new generation of cooks. Even your way of explaining so simply is heartwarming to listen to. God Bless you and your Ron for your passion and this channel. ❤️🙏🏽

    I have 2. The oldest one was my great grandmothers, and the 2nd one was handed down from my grandmother to my mother almost 60 years ago. Then my mother gave it to me. I’ve had it 30+ years. And I’ll be giving them to my children when I pass.

    Beautiful tutorial! I'm blessed to have my mother in law's molcajete that is still being used to this day as it's decades old. I really hope that your video will inspire others to invest in a new molcajete. That was one of the first things that got my feet wet in the kitchen when I was young. My mama would put me to grind her spices and I just loved it. My sweet and wonderful friend may you and your Ron enjoy this cool weekend by just kicking back and enjoying the days and each other.     Yesterday it was making your salsa verde recipe. Today seasoned my new molcajete. Of course my husband and i had to roast veggies and toast some chilies. Made an amazing salsa with so few ingredients. Our arms got a workout. My well cleaned molcajete is on its side on the counter drying. You are a master teacher. A bit of your sweet joy is in our kitchen today.
