You should start a compost for any kinda veggies that you dont use, even the skins of things like onions. Also almost anything at all can be put into veggie stock, so scrub your carrots before you skin them and put them in a stock or even leave the skins on (its not as pretty but all of the nutrition is in the skin) my culinary teacher always collects all veggie scraps for the end of the week to put into stocks and what he doesnt use he puts in his compost bin

Yay, I love this! Whenever I go grocery shopping, I generally spend $30-$40 a week. Trader Joe's is the best!
I go through greens really quickly too (almost as much as I go through a jar of sunflower seed butter--oops!)! If you aren't sure what to do with butternut squash, you should try making a really delicious soup or warming roasted vegetable salad!

Note on Aldi's: My accounting class discussed their inventory management system and why everything is packaged. The packaging has RFID chips to prevent theft (which can be easily carried out with open bins) and better forecast inventory. It actually helps lower costs. Some stores in Germany are even trying to remove checkout aisles by having machines by the doors scan the RFID chips as you walk out and then bill a stored credit card.

Love the purchase haul! I do my own groceries (still live at home thoo) and I never really know what to buy unless I plan everything.. So this is very inspiring! Do you plan your meals ahead? Or just go with the food you have?
The German Aldi recently started selling (some) fruits and veggies without these kind of packages. Maybe they will do this in the US as well.

This is so similar to my grocery shop and I'm in the UK! I always get cauliflower as well though as I'm addicted, and big peppers instead of mini, also most of the time if I have enough money left I'll get aubergines (eggplant) too!

I don't remember BJ's when I lived in FL, but it looks very similar to what is available at Costco/Sam's ... my grocery haul each week is VERY similar ... especially the Aldi haul.

Thanks for the haul! You always show how buying from bulk stores is do-able even if you’re only buying for yourself. You just gotta be OK with eating the same veggies (on a rotating basis) for a couple of days a week.

Glad to hear you are back on your own!! I had to pick up a few things today too. I needed butter (I'm vegetarian), and pretzels because they are good with white chocolate peanut butter. I bought prune juice today for fiber because I feel really constipated today. My mom is trying to go zero waste. My mom is really trying. Today she showed me her stainless steal water bottle. I'm low income and can not go zero waste. My mom recommended to me the "Trash is for Tossers" channel. I also have a $50 budget a week on groceries give or take $10. I also picked up some bananas. :) My mom is also into only organic, once again, I'm low income.
Michelle Sunshinestar organic is good, but I mean you don't always need to buy it because a) more expensive (usually) and b) organic foods can still have pesticides.

Way more than $75 where I'm from. Closest Aldi is 100 miles away, so it's typically Whole Foods or Publix for me. There is a Cash Saver I can sometimes find stuff at.

hey caitlin. i share an apartment with my friends but i’m only home on the weekends and sometimes every other week. all i have in my kitchen is a toster oven and a fridge. can you help and recommend healthy and quick foods i can make that don’t include ingredients that will go bad when i’m gone? thank you!! I live in aus so dunno if I'm incorrect but surely celery and broccoli come in their full size not cut up where you live and therefore not packaged in plastic? I struggle to avoid plastic here too but I though those things would be easy?

hannahbannah In fall/winter season, fruits get sparse in NA. Back in spring/summer I made a lot of fruit salads. But now fruits cost a lot more so I usually stick to frozen berries, bananas and dates.
Unfortunately, that means less fruit- but a lot more grains and starches.
Overall it's not too bad, fall brings squash, cruciferous and other root veg to the table!
Love honey crisp apples but they cost a kidney and a leg in Canada 🇨🇦:(

I want to eat more fresh veggies, I share a fridge with 2 other rooms and I either go through fresh food with in 2-3 days by cooking it all at once. Or forget about it and it goes bad. Still working out the quantity of everything.

I don't know how it is Miami, but wouldn't it be better to buy by the pound so you can avoid buying the pre-packaged produce in plastic bags? That way you can use resuable bags when you buy the pound.
So at king soopers and Safeway here we have produce in plastic and produce that is just out and you can use reusable produce bags for bananas, potatoes, celery, carrots, etc. Do you not have that?

This is a great haul :) It's great that you don't buy 100% organic, but do so when you're able to (I'm the same way). I love Aldi too! In fact I just went there earlier today haha. They have a huge container of organic apple cider vinegar for super cheap. And oats are SO cheap there too.
I get my oats from ALDI as well! I also like how they are starting to carry more organic products
What I do when I can't prevent buying things in plastic is to unwrap them and throw the waste is the special bins in the supermarket.

+ Just smile Hey glad you are a new vegan. Most pantry staples to have as a new vegan are calorie dense "base" foods like beans of any variety, rice brown rice is healthier than white rice but if you desire white rice so be it, potatoes of any variety. You may buy frozen corn, frozen potatoes, frozen peas, frozen carrots, frozen broccoli, frozen blueberries, raspberries, blackberries. So you have some things that will not go perish anytime soon. Then you can buy some fresh veggies of the same or different things you will use every day. , broccoli, cauliflower, snap peas, carrots, zucchini, yellow squash, tomatoes. Fresh fruit bananas, mangos, apples, pears, oranges, lemons, or limes. Grains, 100% Whole Wheat bread, rye, or sourdough check the labels, not all loaves of bread are vegan-friendly. Steel Cut Oats, Old-fashioned (rolled) oats or quick oats if you are low on time in the mornings. Cereal is a great option too. Try to look for something with low oil, and less than 5-6 grams of sugar per serving. Post: grape-nut, shredded wheat, General Mills: Cheerios or Kashi Kashi Flakes, Kashi Nuggets, Cinnamon Harvest, or Autumn Wheat. Kashi is a bit more expensive though. You will also need some Whole food fat in your diet. Avocados, walnuts, almonds are great choices. Choose ground flaxseed put 1 tablespoon in oatmeal or cereal in the mornings and you get your serving of omega 3 for the day. Other nuts, pecans, cashews or macadamia nuts are higher in omega 6 I try to limit these nuts personally, but it's up to you. Plant-based milk? Sure Low-fat organic Soy milk, almond milk, or oat milk are my choices. Vitamin supplement? Take a b-12 supplement the easiest way to get B12 is to take at least one 2,500 mcg supplement each week or a daily dose of 250 mcg. I would choose Cynococobalamin as this is the one with the most research. Not sure if you needed all of this but.... ok. Have fun! Feel free to message me if any of you have questions?

There's no rule (there's also silken tofu that is usally used for desserts though) - just try it out and you'll see what kind you like better for each recipe/meal! ;-)
And regarding your concerns of soy: Don't be afraid - it's healthy (but make sure to eat organic and non-gmo soy)! If you want more info, check out Dr. Michael Greger's channel NutritionFacts.org and take a look at his playlists! :-)

No problem. So tofu is full of protein, the silken tofu, soft tofu, firm tofu, and extra firm tofu. Firm refers to the texture of the tofu, silken is used for a vegan mayonnaise, or even a tofu yogurt, even oil replacement for baking. Soft tofu and firm tofu work well in Asian stir-fry like dishes, as an animal-protein replacement. Extra firm is very firm works well for long cooking items, like a filling for lasagna, or a chili. Also, it's a nice sandwich add-on as well (two slices of whole wheat bread, lettuce, tomato, pickle, caramelized onion, spicy mustard, extra firm tofu) wow, I am hungry lol.Anything in excess is bad for anyone. I would say no more than 2 servings a day, 3 days a week. The amounts where soy was harmful were two case studies one was a teenage boy, consuming 14 servings of tofu a day. The other was a 60-year-old man drinking over 22 cups of soy milk a day for weeks. Soy is thought to be a very healthy food in Asia, many of the longest living people in Japan consume tofu frequently, they were in fine health. That is before the western diet came over, now many of them are just as sick. However, if you don't have much experience with Soy, I would maybe just buy a little bit of Tofu and try a little over a period of three days let's say. Watch your digestion, and if everything is okay, you should be free to enjoy it. You can definetly freeze carrots! I'm not sure about celery though...
according to the internet you can freeze celery, but it won't be as crispy anymore & it is more suitable for stews and sauces etc. (so no ants on a log)... but great news that I can freeze carrots! :D

girl how do you keep your greens from getting wilted and/or brown? i eat them fast too but sometimes i feel like after a day or two they’re already getting gross :(
+ r0cketappliances Here is a little tip I've learned. What you can do is about 3 days before the best by date on the package, put 1/4 cup lemon juice and about 1/4 cup of water in a little spray bottle and just lightly spray the greens. This slows the oxidation process. Oxidation is what makes apples, pears, and avocados turn brown. You may also use a lemon juice, lime juice, or orange juice on these fruits as well to slow the oxidation process. Also, make sure your greens are stored in the coldest part of your fridge and if they are pressed tightly in the corners, split them into two containers until they are loosely stored.
I store mine in a covered glass bowl with a paper towel on top - keeps them nice for about a week if you switch out the paper towel every couple of days!

Yes I am amazed how cheap food is in the US - even organic! It would have cost double at least here in Australia. Aldi is coming to my suburb soon though so that will cut costs quite a bit :-)
yeah...Australian dollar is about the same. Still....food in the US is a lot cheaper than here but then we have a bit of a duopoly situation here with only 2 major supermarket chains. Aldi is breaking through though and forcing the two majors to lower their prices. Organic food here is very expensive.
I live in NYC too and there are a few Aldi stores here. Shop there!!
