German Bread Guillotine Restoration - Antique Kitchen Tool

  • Video about restoration of an Antique German bread guillotine , probably made it 100 years ago or much more.
    In this video I restored a German slicer , from Peter Dienes. I didn't manage to find out its exact age, but I know that it was manufactured around the first world war. Peter Dienes made many bread slicers, among other machines for use in the kitchen , but this slicer was designed for the richest people of that time. In many pictures of the German elite from that period, this bread-slicing machine can be found.
    I saw this guillotine for the first time by chance , among some google searches. Then I saw that only 2 were for sale. In one post, the piece was already sold and in another I had to bid. I won the auction because I really wanted to restore this ancient jewel. There are none for sale anymore, or at least I haven't found any. Which makes me think that they are very rare pieces. So this reinforced my idea to make a restoration video about this wonderful guillotine.
    While I was restoring it, I noticed that this guillotine is built differently from the other slicers I've met before or seen at other restorers. It is built with many details and safety elements. For example , the entire handle assembly had a stopper so that it does not fall over and cause damage. Or another interesting detail that I noticed was the fact that this guillotine has a handle at the top of the base for easy moving from one place to another.
    During the restoration I noticed many casting marks but I preferred to keep them because, as I said, the guillotine is rare and I wanted to keep as many old elements as possible . In this case, the restoration with the result of a perfectly smooth surface and without imperfections, was really pointless.
    After a survey in the CZcams channel community, I decided that at the end of the restoration, I would make a simple and delicious recipe, using this guillotine. I hope you like this restoration, I hope you like the video and the recipe at the end. Thanks !

    • @papaquonis
      @papaquonis Před 6 měsíci +12

      The reason it doesn't seem optimal, is because it's not cutting the type of bread it was made to cut. It's meant to cut Northern European style rye bread, which is MUCH denser than the soft white bread that's cut at the end of this video. I have an old bread guillotine, not quite the same type as this fancier model, but definitely a similar kind of machine, and we would never ever use it for soft white bread. A decent bread knife is far superior for that. But for dense rye bread - here in Denmark we call it rugbrød, in Germany it's probably Pumpernickel or Schwarzbrot or something similar - it's a magnificent tool, that slices perfectly even thin slices much better than you could ever dream of doing with a bread knife.

    • @CoolAgainRestoration
      @CoolAgainRestoration  Před 6 měsíci +3

      @papaquonis true , we don’t have here that type of bread. The only chance to do a nice cut is to wait until the bread will became old. But I made it another slicer 2 years ago and people told me that I succeeded to cut the bread because the bread was old and hard 🤧 now I used soft bread 😅

      Usually when I see these videos, the person doing them, uses stock they have left over from other projects. This way they don't just waste off cuts by buying new stock every time.
      It's a trade off, because sometimes you have the right metal, but the stock is a bit too over sized, so while it may seem like they're wasting the metal, they're reusing scrap metal left over.
      It's also worth mentioning that steel can indeed be remelted into new stock.

    Nicely done. And relaxing to watch before bed. And since the blade was in great ship (if pitted), reusing it as is was a very nice touch. No need to sand it down smooth, looks perfect that way.

    Pretty cool Breadslicer. Today we use the rotary method for cold cuts and bread, but bread cutting machines work similar to your guillotine :)

    I didn't come here for the restoration, but the function of this machine. Nice restoration thou. I have never seen anything like this. I wish there was something similar to this in the shops. Then I would have opted for this, instead of my electrical slicer.
    I can't belive that there is so many positive comments, and only a few likes. If people like this, they should at least click the like button (as I did). Keep up the great work, and stay awesome!
