When you buy Flax Seeds only buy the whole seed or if it is frozen or packed in nitrogen. Flax seeds go rancid quickly, so the flax seeds that are milled or ground without being packed in nitrogen or frozen are rancid. You can grind our own flax seeds in about a minute with a blender. This is helpful information. I knew that ground flax and chia can go rancid if stored at room temperature for long periods of time. Oxidative risk occurs after seeds are ground; therefore, I do not purchase ground flax seeds. Heat and light are particularly detrimental.
According to many sources, flax and even chia should be freshly ground to maximize the nutritional benefits. I grind a 50/50 blend of whole flax/chia and store it in a sealed container in the refrigerator for no longer a few days. I use two tablespoons in yogurt, keto cereals, smoothies, et al.
I store the whole seeds in their original packages inside freezer bags in the freezer. I remove only the amount needed to grind more seeds.

I buy the whole flax and chia, then lightly "crack" the seeds in a Margo Molina flour mill when I am ready to use it...because the seeds have the high oil content they have a tendency to foul the grinding burs...it's not too bad if I do a light crack, the mill doesn't foul as bad, and it's not too hard to clean the mill afterwards (keeping the seeds frozen helps too); just enough to break the shell, then let digestion do the rest...(the worst is sesame seeds, they really gum up the machine; cracking them when they are frozen really helps)...but I will run some 5-grain cereal through the machine, after cracking the seeds, to clean the burs...(and Bob's Red Mill 5-grain cereal with flax makes really good flour)...
