Wow i saw the bacon up you used in your recipe..i never knew one could buy bacon grease. I went to walmart site and low and behold the walmart where i live had it which is surprising. I make a skillet version of that dish, using instant brown rice in it. I do everything the same as you did, (using a can of chopped green chiles instead of jalapeno), then add my Ro*Tel and tomato sauce, plus my instant rice and enough water to "cook" the rice. Cover and let it simmer. Sometimes I add a can of blackeyed peas for "Texas Rice & Peas"; sometimes we have some pinto beans on the side. We love it either way.
Talli Faye I wish I could reach into my TV and grab that Texas Red Rice from you!!!😄 It looks so good but I know it's hot, hot, hot with that seeded jalapeno in it but it's Texas after all and we do love spicy! I think that most people have never tasted Slovacek's sausage which is really good, it's not being sold everywhere and when we still used to live in Bryan, I went several times to their store in Caldwell and also brought home some yummy Kolaches. They had cornbread and it was so good i asked them how they made it and they told me it was a secret. I put my thinking cap on and im pretty sure they added just a little bit of yellow cake mix to it.. it was great. just sharing like you do!

I am not a very good rice cook for some reason I mess it up my instant pot has a rice setting but I never tried to use it. Do you use instant rice of the longer cooking rice. I love rice but I just can’t seem to get it right
I would probably prefer the whole grain rice in this dish but I still bet you wouldn’t be disappointed using the instant if you’re more comfortable with it… just do everything else the same… maybe make your instant rice with a tad more water than usual
