      Beryl freezes banana leaves, etc. Apparently she hasn’t figured out that she can separate the celery into portion sizes of her choice and freeze them. Not hard at all to do. And, celery does indeed add flavor.

    my jaw was on the floor when i saw the tumpeng in your thumbnail and then i watched the video..... GURL that was a lot of hardwork cuz here in Indonesia we usually make the whole tumpeng and the side dishes by at least two people and it'd even take a whole day. definetely A++++++ for the immaculate effort 😭😭👏🏻👏🏻👏🏻

    The trick for the tumpeng rice is:
    You need to shape the banana leaf into a cone, staple on the sides to make it firm, then fill it with rice. Afterwards, flip the cone shaped rice and place it on a plate.

      The rice has to be sticky. As seen in the video, Beryl used long-grain rice like basmati rice, I recommend using short-grain rice or putting more water than usual

      I know, I am allergic to seafood so alot of this, especially the Eastern isn't something I can try, no matter how good it sounds. But hell, use some chorizo instead of the vienna/hotdogs, (I hate hotdogs, they taste like rubber to me) I'll try the Nicaraguan rice, and all the yummer veg. I have tomatoes and peppers in my veggie garden right now....

    In Ghana, a birthday meal consist of jollof rice with any protein of your choice, or fufu with your choice of light soup or peanut soup, or banku or many more options. People with more means often hire catering services and host HUGE parties with many people coming over to celebrate you. Presents are given, mostly money. It’s really a great time!

      I am glad you mentioned white American because wven here in the states we all celebrate birthdays differently depending on our culture.
      Because in my family we celebrate each birthday with our favorite meal, favkrite type of dessert, sing happy biethday and spend the day at home together or go somewhere depending on who's birthday it is..
      Here is a example of what I speak on like my birthday I always request a red velvet cake or else chocolate mouse pie but mainly it's red velvet cake the authentic kind so yes it taste far different its not simply chocolate cake like some folks think but anyways favorite meal usually is carne asada fries or something random of my choosing and I best prefer staying at home with my parents, sisters & son.
      Another example is my younger sister who always request her favorite cheesecake, steak & salad and usually just wants to chill at home with family but prior to that go somewhere of her choosing..​@@avibarr2751

    I agree about the celery. I now religiously cut up the entire thing when I bring it home. Part goes into a big chopped salad and part goes into whatever dish I bought it for and the rest in the freezer. Let me tell you frozen celery works in almost any dish that is cooked. It may
    Not work for a fresh salad...but for everything else it works. You just have to remember that you have it in the freezer so you don't buy MORE. LOL

    Happy Belated Birthday, Beryl! 🎂 Thank you for including Indonesian _tumpeng_ in this video! 🙏 When I was a little kid, all I wanted was a birthday cake, but now that I'm getting older, I appreciate the meaningful symbolism in it.
    The conical shape represents the mountains, the abode of the spirits and gods in traditional Indonesian beliefs. The young lady didn't mention it, but side dishes are usually made up of elements that represent the abundance of the land, water, and air. The entire dish is a prayer and hope for the one who’s having the birthday. 🥳

    My neighbour is about to turn 80 and we're having an afternoon tea to celebrate and 1000% I will be taking a plate of fairy bread next door. Loved it as a kid, still find it so joyful! Fairy bread and sausage rolls are essential for a real birthday party here in Oz!! Cheers from Sydney!

    I am English but was fortunate to leave in a shared South Korean house for six years in South West London in a place called New Malden, which is often known as little Korea. Nothing will ever beat the soup Oma (auntie) made for breakfast, sometimes seaweed, sesame oil and tofu (cheaper than beef), sometimes gourd and tofu with chili. I miss you Oma

    Fairy bread to us Australians is childhood on a plate. Its easy and fun to make and delicious. Everyone laughs or at least smiles when we eat it because it reminds us all of the happy kids we were and in some cases still are.
    I'm a 52 year old male, I live in a country Queensland town, I ride a Harley, I do hard physical work with my hands in the bush and I love Fairy bread. I smile at every party when I see it.
    I challenge anyone to eat it without a smile.

    The supermarket a few blocks from me actually sells individual stalks of celery and I love them for it. I had that same complaint as you, but it turns out the manager said they sell more celery as sticks than they do as whole bags because sometimes if someone has to buy a whole bag they just decide to not make whatever they were going to make, whereas being able to buy individual stalks people will often buy 1/3 or 1/2 a bag worth of celery anyway but the sales are more consistent. So now if I'm going to make a few tuna sandwiches or something I can just buy one stalk for like 30 cents instead of 6 bucks for a bag.

      I'm not a regular celery user so this would be perfect for me! Recently had friends over for Spaghetti Bolognese and my mum's recipe needs one stalk of celery, and I was so annoyed having to buy a whole head! I was temped to just break off a stalk and steal it rather than pay for the whole thing (but I didn't). Had to eat fucking celery for a week after! I don't particularly care for celery...

      My grocery store sells them like this too. It’s perfect for me because I live alone so I’m always cooking for one, and when I do need celery (usually in soups or something) I don’t need more than 1-2 stalks at a time anyways.

    Beryl, next time if you gotta mold rice into a tower, just roll your leaf into a cone & pin it up w/ toothpick. Then put your rice into it while hot. When it cooled, it will take on the cone shape

    In india we dont typically have a birthday tradition food but i made a tradition for myself - i have hot jalebi, crispy fafda and papaya cheen with green chutney and fried chillis. Its a mandate in my house and i look forward to it every bday. The most indulgent meal ever!

      The Singaporean mee hoon is very similar to pancit bihon. It also has very similar symbolism when served in birthday celebrations. I suppose the more traditional birthday pancit in the Philippines is pancit canton, but I've had a variety of pancit for birthdays from bihon, sotanghon, and bam-i, the last one seems not to be a thing in Manila.

      @@f424m0nd pancit canton isn't necessarily the traditional one. It actually depends on the family and their preferences. Sometimes, especially during childrens' parties, they would prefer Filipino style spaghetti instead of pancit

    I'm so thrilled you were successful with the swiss meringue buttercream!!!!! I'm a baker and cake decorator myself, and for the next time you make the buttercream, you don't have to whisk the egg whites the whole time. You want to keep any eye on them and whisk frequently, but don't hurt yourself. Congratulations!! You did amazingly well!!

    FAIRY BREAD!!! as an Aussie of COURSE I approve and recommend 😂 absolutely cracked up when Susan said it has to be cut in triangles or it's just not right - she's right and should say it (and also they have to be hundreds and thousands, no other sprinkle is acceptable lol)
    Fairy bread is everyday magic. My kids always have it on their birthdays. My stepdad home-made strawberry butter for fairy bread for my eldest child's first birthday to make it extra special.

    Even in America rice is used a lot for birthday dinners. My mother was as American as you can get with English for many generations on her mother's side and German on her father's side. Birthday dinner was chicken a la king over rice. The darker and more yellow and richer the gravy the better. Then homemade yellow batter cake with boiled marshmallow icing and coconut all over it. This is during the Great Depression mind you. This episode is pleasant and relaxing. Thank you.

    In Scotland we don't have set birthday food. Most people go to a restaurant, or if at home, the person's favourite food is made. But I do remember as a kid that plain vanilla ice cream served with strawberry jelly was ubiquitous at birthday parties, so that's what came into my mind. Close to zero effort and keeps the kids happy for a few minutes before they ask for more cake!

    Aww my grandma used to make mayo chocolate cakes for birthdays! Although she made them with chocolate frosting. She loved telling people what the "secret" ingredient was and watching their reaction to putting mayo in cake. Thank you so much for sharing this one! Also your cake was stunning! So beautiful.

    My chain grocery stores in PA sell fresh chopped celery, chopped celery/onion, and mirepoix in small containers - usually enough for one recipe. Usually found on the top shelves of the produce section or the deli area. A little spendier, but I don't end up wasting celery.

      I've heard sort of the inverse "close only counts for horseshoes and hand grenades" as in whatever you're doing needs to be better, but I feel like "close enough for..." Is more positive like whatever you're doing is already good enough :) really bizarre phrase though haha

    As I have gotten older, I have grown to love celery. I use a whole head to make cream of celery soup, sometimes with chicken. I also love Waldorf salad (mostly celery and apples). I put it in my beans, which I make at least every couple of weeks. I love the smell of celery.

    My daughter turned 22 today! So appropriate. Our electric was out until about an hour ago, so we almost missed seeing this on the right day. She had steak because in our family, birthday kid picks their favorite dinner. My brother always wanted lasagna. My son just wants pizza or burgers .

    I'm so glad you did Fairy Bread! We have it at birthday parties for children anywhere from toddlers to tweens, and even as an adult i still get nostalgic for it and want to make fairy bread to cheer myself up

      I work in a grocery store and was telling someone who bought a small bday cake that sometimes you just have to treat yourself. It doesn't have to be your birthday to enjoy a cake or treat. Sometimes we need that nostalgia just because its been rough lately. :)

    In Scotland, we don’t really have anything specifically eaten on birthdays but in our family we either eat out somewhere that the person having the birthday likes or we make their favourite at home. I usually take the day off to make that person’s birthday cake because I love doing it and I plan very far in advance.

    I found this in a 100 year old cookbook; it's how to serve celery as a side dish. Great for all the leftover stalks. Use a vegetable peeler to peel off as much of the fibrous threads as you can. Cut the stalks into bite-sized pieces. Drop them into gently boiling chicken or veggie broth. After a few minutes, the celery will start to soften. Try a piece and when the celery is soft but still a tad crunchy, drain and serve plain, or with a bit of butter and salt. Voila!

    Just a tip, for the swiss meringue buttercream, you do not need to whisk the egg whites while heating it. It's just a total waste of energy🤣. To make things easier, you just need to stir it constantly throughout the whole heating process (you can just stir it at a comfortable and relaxed pace) as the objective is just to distribute the heat evenly throughout the mixture and for the sugar to dissolve before the heavy whipping starts, the kitchenaid will do the work for you

    Ok. Celery. The easiest way that I use up celery is in a finger salad. Dump your dressing of choice in a bowl with toppings (I'm partial to sunflower seeds, bacon bits and crushed croutons) and serve the celery on a separate plate cut into thirds. Just dip/scoop into your dressing and enjoy.

    Beryl, if you have a vacuum sealer, chop all of your celery at once, blanch the leftovers, freeze on a tray, vacuum seal, pop back in the freezer, and voila! Perfectly preserved celery for future use.

    I have heard your Dad's saying. Has he heard close enough for government work?
    Little hint dust your pan with cocoa powder when you make a chocolate cake, flour for white cake, etc.
    There is a little local bakery, Sugarloaf Island Bakery, in the town we live and Will makes the best butter creme icing i have ever had! It's so smooth, not too sweet and I look forward to it every year! 😊

    For celery or other leftover vegetables:
    Throw everything in a food processor with salt in a 7:1 ratio. Blend it into a fine paste, put it in a jar and keep it in the fridge as a healthier bouillon cube alternative for soup, stew and pasta sauces.
    Works great with celery, carrots and leak, but also other hearty vegetables.

    In my family we say “close only counts in horseshoes and hand grenades”, but I really prefer your dad’s “close enough for hand grenades”, which has a real yolo quality about it. My dad also says “Done or raw, it’ll do to chaw” and “it’ll hold body and soul together”, which is what I say now when I have cooked something that I didn’t think was that great

    All of these birthday dishes look so delicious. I love that several traditions involve rice. I wonder if it is a symbolic thing... like maybe lots of grains of rice for many good years of life, like long noodles are symbolic of long life in some countries..

    About the celery: I never put my celery in the fridge. I put the whole thing in a vase or big glass and add some water and some food for plants ( following the instructions to get the right amount). So this way I can enjoy one or two stalks of fresh celery until it’s gone. You just need to check the water level so the celery doesn’t dry out.

    Beryl, here is my mom’s recipe for a refreshing celery salad. She was from Taiwan and had really great salads for snacking or as side dishes:
    Trim celery to 2” sticks, then slice into thin strips. Salt celery and set aside until celery wilts. Rinse and pat dry.
    Toss with sugar, wine, vinegar, minced garlic, crushed red pepper and sesame oil (measure with your heart). Can add a bit of shredded carrots as well for color.
    Allow to marinate in fridge at least two hours before serving. (Though even better next day.)
    Enjoy!

    Here in France, it's easy to buy single stalks of celery. Unlike in the US, where it's often eaten as a snack, in France, celery is used for cooking.

      The US uses celery more than just a snack, there's salads, vegetable soup, and smoothies (the weird recipe). I don't eat celery but my dad who's from Northern China makes a stir-fry celery dish.

      With a soft cheese and especially something like Roquefort, Gorgonzola or Magor (Marscapone and Gorgonzola in layers for a softer taste), it's super delicious. Just put the cheese into the 'fold' of the celery and cut it in bite size chunks. You should try it.

    If you have a juicer, 4 stalks celery, 4 small apples, small piece of ginger, and half a lime (I also use a leaf or two of lacinato kale or handfull of spinach) it is delicious!

    Loved this episode! You can absolutely use cup measurements to bake a cake, been doing it my whole life. You just have to know how to properly measure things. Like measuring flour and brown sugar in a cup measure is different. Episode idea inspired by this though: baked goods or cakes from around the world! :) that would be so fun. Watching made me have such a warm feeling, remembering that my mom always made my favorite cake from scratch and anything I requested for dinner even if complicated or something she never made before.

    Some stores do sell individual stalks of celery, but 2-4 can end up costing about the same as a bunch (or 2-3 pack of trimmed “hearts”). They also often have pre-chopped, but maybe only in a mirepoix, or as sticks but likely also w/ carrot. If you get full bunches or hearts, you can cut them and package them in water (to at least cover one end) and they’ll last quite a while.

    Celery! Get it at a grocery store that has a salad bar!!!!
    When you get a whole bunch, chop some of it up with onions and carrots and put it your freezer for soups.
    Also save some and make a quick marinated chickpea salad: 1 can chickpeas (rinsed and drained), 1/4 cup diced red onion, 2 stalks chopped celery, chopped red/yellow/orange bell peppers (I use the mini ones), cube half a cup of pepper jack cheese, then toss it all in Olive Garden Italian dressing and either devour immediately or store to the fridge a few days. Mix in some fresh dill and halved grape tomatoes right before eating to mix it up!

    Chocolate mayonnaise cake is my favorite kind of cake that my mom used to make for me on my birthday! However, my mom's version is a bit different from this one. My mom's version never contains jam and usually has chocolate frosting. By the way, my sister's name is Christa and her birthday is also in January, lol. However, she's never been to Minnesota. Also, my dad sometimes says, "Close enough only counts with horseshoes and hand grenades."
