On the Empire side I like the Agent story best because of the intrigues and how well it is writen. On the Republic side either Knight or Smuggler, Knight because it's Star Warsy and Smuggler because of the humor. As for which class I prefer to play I have to say assassin/shadow simply because I like being sneaky and have lots of crowd control and damage.
