    My mother taught me to add a little flour to the mixture, just enough to bind it and keep the dumplings from falling apart. Your recipe is what we called Tiroler Speck Knoedel. If you have left over Knoedel, we used to cut them in half and slice them, roast them in oil or butter in the frying pan with or without some beaten eggs poured over them. They taste great with a salad or with apple sauce on the side.

      You dont need flour if you got the right starchy potatoes.

    Potato dumplings video was perfect. My Mother was German. From Frankfurt.
    She passed in 2012 she moved to the states after marrying my father in 1955 Each year
    She made traditional German Rouladen for our Christmas Eve dinner with these dumplings too.this was a special occasion dinner for a family of seven on a
    Strict budget. I now have 5 sisters and each of us have continued this tradition in our homes. Our children love it and are now grown. My son in-law and his parents absolutely love this! Each of them wanting to be taught to make this dish to continue the tradition in their homes.

    My mom was born just outside of Salzburg to Ukrainian and Russian parents, and came to BC, Canada when she was 2 years old. We went back to her birthplace (near where the Silent Night chapel is) when I was 6. We also went to Germany (and all over Europe), but we only found knodel in Austria. They thought we were crazy ordering dozens of them day after day 😂. I’ve never known how to make it, nor did anyone in the family, so I am psyched to find this video!

    I was born in Germany but grew up in the UK, now that I’m an adult I wish I’d made more of an effort to learn how to cook German food when I was growing up.

      It’s never too late! I grew up in the UK but lived in Germany for a year. I LOVED the German food. Watching this woman cook makes me hungry. 😆

    Ah yes, Barbara….definitely a favorite, I grew up with…SemmelKnodel. My Mother would make these for Sunday Supper, with Pork Roast and Gravy….so good!

    I've made these before. One of my favorites. My father in-law they were from Vienna Austria... He showed me how to make them . He did add a bit of flour and caraway seed. The flour definitely helped too hold them together when dropping them in the water. 🥰

    I love German food. You are so gorgeous and great at what at what you do. Had I known German ladies were do beautiful and talented I would have been there years ago. Keep the recipes coming. I try to make things on the weekend.

    Sieht lecker aus!!! Also BRAVO on reducing your meat consumption. We’ve done the same. I also use a little bacon occasionally and seafood once a week but we’ve been mostly vegetarian for about 5 yrs now ❤️

    Finally there is somebody making German food line. Love the recipes, easy to make. Volume is very quite, really hard to hear you, and if I’m working out and watching your recipes then I’m just looking at the picture because no matter how loud I put it I can’t hear you

      I totally understand. I still don't care for beets. They taste the way dirt smells. And cilantro tastes like soap.

    I would like to freeze some of if.
    How and when do you recommend me to do that? At specific part of the recipe? (wich part?) Or At the end when it is all ready?

      I have bern freezing them after shaping and then put them frozen into the hot water. It worked.

    My mom never put bacon in her knoeddel. Are you sure? She also added some flour to make it glue-ier.

      You can simply leave out the bacon. I make a vegetarian version for some of my friends this way.

      Trust me, it killed me, too. But mostly because it was so hot! It survived the cooking without any stains or damage ... lucky me! :-)

      You leave after one opinion? Really? I too dislike the whole 'no cow, 'no meat'' push, but her recipes are fantastic. Suggest you give her some slack on this one.

      Her recipes are not in the equation @@thegiftlady1. One does not need an opinion on what they shall consume as that is a personal choice.
      Stick to the recipe, make it entertaining, maybe add a little humour or an anecdote or two but spare the opinions especially when it comes to personal choices.

    Decreasing meat does not improve the environment when two countries are still dumping TONS of waste in the air and the ocean.

      Yes, I agree that we still have way to many emissions and create way too much trash and we really need to get a grip on that but reducing the amount of meat we eat has several important impacts, too. It does improve the environment.
      1. Cattle create a lot of methane when they digest their food. It has a big impact on the climate.
      2. Animals need space and producing their food like hay, soy etc. adds to that space. That means that forests are cut down (especially in the rain forest where a lot of meat is produced), also other natural areas are turned into agricultural land, reducing natural ecosystems.
      3. A lot of meat is transported from Sout America to the US and believe it or not, the US then sells meat to the EU and ships it there. That's just insane!
      4. The farmed animals create a lot of manure which is then brought onto the farmed land as fertilizer but it also gets into the groundwater and from there into rivers and lastly into the ocean ... ever wondered where all the algae bloom in the river deltas and i.e. along the coast of Florida comes from? It kills fish because of the lack of oxygen in the water ...
      I could go on but I think you get the picture. No, I'm not saying we can't eat meat anymore but I'm saying we need to reduce it. A lot of people eat meat for breakfast, lunch and dinner every day. I am sure we can do better and start caring about where our meat comes from and maybe have some meat-free meals during the week.
      I love a good steak and will continue to have it ... every now and then, from a farm nearby. On other days I'll enjoy meatless alternatives. That is what I chose, it might not me someone else's choice.
