    This is the right food for the Oktoberfest time.
    There are many ways to combine it - best ist with some roasted meat.
    You can also combine it with a sauce of creamy mushrooms - I will show you how in my next video
    Enjoy your bread / roll - dumpling Semmelknoedel with a cold and fresh beer.
    Have fun while trying it out.
    Ingredients:
    For 4 servings
    200 g rolls from the previous day
    1 onion
    2 tbsp butter
    120 ml of milk
    2 eggs (class M)
    salt
    pepper
    nutmeg
    1 bunch of parsley
    0.5 Tl baking powder
    How to:
    Finely chop the rolls. Finely chop the onion. Roast lightly in the melted butter, deglaze with the milk and pour over the bread rolls. Whisk eggs and season with salt, pepper and nutmeg. Pick parsley and finely chop. Knead with eggs and baking powder under the breadcrumbs until a smooth dough is formed. Possibly. season and let rest for 10 minutes.
    Form the mass into 8 dumplings with wet hands. Pour into plenty of boiling salted water, boil briefly and let stand for 20 minutes in mild heat. Carefully lift out and drain.

    Ingredients
    For 4 servings (why don´t you double it? you can panfry the leftovers the other day!)
    200 g rolls from the previous day

    MY TIPP:
    Best is, you start with a single dumpling to test if the consistency is alright. If they don´t stick together properly you might take another egg.
    If you have a steamer, it´s a good idea to prepare them in a steamer.

    I think my mother left the crusts on the bread as her dumplings had more color. She served them with boiled sliced potatoes, pork steak and lots of gravy. Yum!

    I just had these for the first time at a restaurant. They were amazing and tasted almost exactly like my grandmother and mothers’s Turkey stuffing recipe. They used bacon as I’ve seen in a few other videos. I too think I would pan fry them after and serve with gravy. Great job and great video.

    Thank you for the recipe! I’ve been making bread dumplings for years and find them to be one of the best dumplings out there! And I agree, sliced and fried the next day, they’re divine! Oh and they freeze beautifully but we eat them too quickly.

    After adding warm milk ,butter and eggs. I toss it. Cover with plastic wrap and walk away for 30 minutes. Then i add my fresh parsley and form them.

    Mmmmmmm!!! Semmelknödel!! One of my favourites!! I´m going to München tomorrow for Oktoberfest, and I´m going to stuff myself full with knödel, haxe and good bavarian beer!! I probably will have to buy an extra seat on the plane home because I will probably double in size haha!!

    My grandmother was from Germany, she used to make these noodles with flour, salt, eggs and a little milk. When the dough was done she would roll it out spread butter and bread crumbs on it and then boil. I wish she would have put to paper the recipe but she never did. I've asked many people and no one knows of these or what they would have been called. All I remember is she made a well in the dry ingredients on the kitchen table and then added the liquid to the center and mixed by hand. The best way to eat them was in soup or straight out of the pot of water

    OMG I make this in the Microwave n we call it Onion Pudding, but I add sugar n a nice bit, yummm I also add a lil Flour n Baking powder, love this gonna try it,

      absolutely, we all hv a lil spin on Onion pudding, some make it n steam in a Pudding bag, what i hv done for years is , take bread in bite size pieces n then i put water/milk if u like to get it covered n toss n then i add my chopped onion n I put melted butter lets say i use 6 slices off bread, i'd use tbsp butter , then I add about 1/4 cup sugar, then i start combining that with a spoon lighly, then i use a tsp baking powder to 1 cup off flour n start adding turning lightly until u get that comfort off everything combined n not sticky, then i place in a greased glass bowl I use n then i put it in microwave for 5 minutes , covered with plastic wrap n I cut lil slits in my cover n not tight, its is amazing, once u get use to things u like to do with it fr ur first try,, hope u like it, we use this with pot roast or our very large cooked meals, Turkey, Chicken., Pork, hehe,

    Really good dumplings! Had a bit of trouble keeping them together. I took them out of the water before they fell apart and pan fried them instead. They tasted amazing. Maybe i will have to add flour if i boil them again? Not sure but am definitely making them again! Thanks!

      You can try starch. And take the cooked potatoes and work wirh them

    When you say you want the onions to be “glassy” in English the correct term would be “sweat”. To sauté the onions would be to brown them on high heat, but to sweat the onions would be to cook them on a medium to low heat, usually with a pinch of salt, so that the onions become translucent and soft.
    The term you are looking for is “sweat the onions”.
