  • Do your eggs have a grade? Each USDA grade is a mark of the egg's quality. Grade AA eggs are the highest quality whereas Grade B are the lowest.

    I Germany grades are determined by how the chickens are kept. 3 is caged (now banned), 2 is in a stable, 1 is free roam and zero is organic.

      I would eat a Grade C egg as well as long as it was safe.
      But people aren't logical...
      It's like seeing something marketed as Grade C meat, most consumers would probably think it wasn't safe to eat.

    In my country, the eggs are graded based on the size.
    Grade D eggs are the smallest and grade A eggs are the largest.

    For metric people:
    1/8 inch ≈ 3mm
    3/16 inch ≈ 5mm

    We in Germany don't wash our eggs before they come into the store, that way they keep their natural protective layer around them and don't need to be cooled.

    Marketers can use the grade shield to increase their prices even though the product may not have a grade? How the heck? What the heck? Then how do I know the product they're selling is actually AA grade?

      Slight difference. Because an egg has a fixed composition in order to provide nutrition for a growing chick, the are more or less same.

      The only impact on nutrition a farm can have on a chicken egg, is in terms of carotenoid, lutein, and fat composition; this is done by modifying the diet to include brightly-pigmented foods or feeds rich in oils/fats. In overall nutrient profile, they are very, very similar (e.g., protein and vitamin contents are exact).

    In France, we have 0, 1, 2 or 3
    0 is for organic eggs from free-ranging hens
    1 is for other eggs from free-ranging hens
    2 is for eggs from hens on the ground who never go outside
    3 is for eggs from caged hens

      Not necessarily bad, just old. The longer you keep even a Grade AA egg, the greater the air sac because shells are permeable - and the eggs dry out.
