Tomato water is great in some cocktails- especially those based around gin, tequila or vodka. Mix in some cucumber juice and lime zest and you get a very refreshing drink for a hot tropical lunch... especially if the tomato pulp is used in that lunch... say in making pizza sauce or spicy Mexican beans.
The first cocktsil that comes to mind is a bloody mary or its cousin The Ceasar. The diff being Ceasar uses clam juice along with the tomato
