  • Pratham is a sweet dish and one of the unique food of Keralites. It is an indispensable part of wedding feast and other important celebrations. This is a dish that takes a lot of time and patience to make. It takes at least one and half an hour to prepare this dish.
    Required ingredients are :
    200gm rice ada, 500 gm jaggery , two table spoon ghee, 1 tea spoon cardamom powder, 1 table spoon cashew nut , 1 ltr coconut milk, 1 ltr fresh milk .
    method of making
    First we need to make jaggery syrup. for this add jaggery into 2 cups of boiled water and stir until it is melt completely . strain the jaggery syrup .then keep it aside .
    Then you need to soak the rice ada in boiled water for 10 minutes. then drain the ada without any water. add two table spoon ghee onto the vessel which is used to make prathaman. add cashew nut and stir until it turns golden brown colour. remove it from the pan. then add rice ada on to the same , then add coconut milk and stir it continuously until it becomes a thick creamy texture . if needed add more milk. continuous stiring is important . you need to cook the ada well before adding jaggery syrup. if the ada is cooked well then add jaggery syrup and stir, then add ghee and cardamom powder and mix it well . switch off the flame and let it to be cool. your tasty prathaman is ready.
    Important : total cooking time 1 1/2 hours
