- Homemade Broccoli Cheese Soup is the ultimate comfort food. This is lighter than most but just as creamy! Our version of Panera Broccoli and Cheese Soup.

BROCCOLI SOUP INGREDIENTS:
►2 Tbsp butter
►1 cup onion, finely diced (1 medium onion)
►2 cups carrots, sliced into thin half-rings (2 medium)
►4 cups chicken broth
►4 cups broccoli (chopped into small florets & diced stems)
►1 tsp garlic powder
►1 tsp Salt, or to taste
►1/4 tsp black pepper
►1/4 tsp thyme
►3 Tbsp flour
►1/2 cup heavy whipping cream
►1 tsp dijon mustard
►4 oz sharp cheddar cheese, shredded on the large holes of a box grater + for garnish
►2/3 cup parmesan cheese, shredded

I just made this but also added diced potatoes and it came out delicious except next time I don’t think I’ll use the immersion blender. I like the bigger vegetable pieces in my broccoli cheddar soup. Also adding the bread bowls. Great recipe!

This was literally fantastic. It was everything I wanted it to be. My mom loved it. The consistency was amazing. It tasted restaurant quality probably even bettter tbh. The texture really did it for me also thanks to the flour + heavy cream combo. Amazing

This is absolutely the best soup ever!! I’m getting an immersion blender-using a blender is a mess!! We loved it so much the first time I made it, that I made a double batch this time! I’m hoping to get 1/2 of it in the freezer for another day. Wish me luck! 😄
I chopped everything up before I cooked it. I have an electric chopper..
An immersion (stick) blender is such a useful indispensable kitchen tool! I first got one for making homemade mayo and it was just a basic stick blender with only an additional whisk attachment, but I recently re-homed that one and upgraded to one with more additional attachments, including a mini chopper/mini food processor. I did not own a food processor and couldn't justify investing in one now that I live alone in a small apartment with a tiny kitchen with no where to store it and no need for a full sized processor anymore now, so the mini chopper/processor on my new Immersion blender is perfect for me, I use it to make small batches of brown sugar so I can get it used up before it gets hard like a 2 Lb. bag from the store does. My homemade brown sugar also stays soft for longer as well and I like that it's easy to make either light or dark brown sugar.
