Dill Pickles
-8 lbs cucumbers
-3/4 cup sugar
-1/2 cup preserving salt
-1 quart water
-1 quart vinegar
-Dill
-Garlic
-Grape leaf (optional)
Prepare cucumbers, wash them under cold water, or let them sit in ice bath until ready to use. Use whole, cut into spears or slices. Combine sugar, salt, vinegar, and water in a large pot, bring mixture to a boil, stirring until sugar is dissolved. Reduce heat and simmer for 15 minutes. Put a piece of dill in the bottom of jar along with 1 clove of garlic. Pack cucumbers into jar, put another piece of dill and a garlic clove on top. Ladle hot pickling liquid over pickles until your 1/2 inch from top. Put lid and ring on jar. Water bath for 15 minutes. Let jars cool for 24 hrs. Remove ring, store in cool dark place.

Old school, actually. It is only for jams and jellies, etc. The contents in the jar must be very hot.
I’m am old school. 😂😂😂But I guess didn’t go to school that day. 😂😂😂 Makes perfect sense. I will be trying this method as it makes perfect sense when you think about. Thanks for sharing.

That is a food mill. I love blackberry jelly Don't like the seeds. The tame blackberry doesn't have as much flavor as the wild so you did great adding the wild ones. Loving all of your videos

Blackberry is my favorite. I remember going to the woods by mamaw and papaws and picking wild blackberries with papaw and then mamaw would can a big batch of jelly. She usually sieved them all and made more of a jelly than a jam. ❤ sweet memories

Hi 👋 Hope you’re doing good. I made the “Simple Dill” recipe. Girl, my garlic turned green/blue?? What in the world? I googled it. 😂 It said that they are prized whenever they turn green and that it is safe to eat? We’re picky too!! so this is my first time ever making pickles.. Are they really ok and safe to eat??
My husband always liked dill pickles made with the small cucumbers, we get a virus in the vines so we don’t grow them anymore.

Yes I did my pickles the same way, again I have to make sure that brine is super hot, but just haven’t had good luck water bathing pickles so I do them the old way to ☺️

Your device to grind your berries is called a Food Mill.
You are the only one besides me and my aunt that ive seen do the inverted method
I've seen many do the inverted trick but they never explained it. I found out that most berries blue ,black have a high quality of pectin on their own. Just got doing a recipe for blueberries. I've got another little secret I'll email see if you like it. Your doing a great job teaching us all new easier ideas. Have a very blessed day stay cool. ❤️🙏👍⭐💯

I do that with my strawberry jam and blueberries . But have a problem with doing it with apple jelly and watermelon jelly.
Hi Megan I notice you turn your canning jars upside down before heading to the canner or water bath is there a purpose for this step ? I love your videos you’ve taught me a many of things
Honestly it’s an old timey method that is no longer recommended. It was how I was taught and feel like my things keep better if I do it, that may just be in my mind, haha!

I don’t recall seeing you process pickles but it says to in the description. Which way?
I usually open kettle mine (not recommended method), but it is recommended to process them ☺️
Question…was that the open kettle method u used for your pickles?
Yes you are supposed to water bath pickles, I choose not to, but it is recommended. If you do not water bath them the brine needs to be HOT, for it to work. Good luck my friend!
I’ve never made jelly or jam…. So question… I thought all those had to undergo a water bath canning? I guess before I do any of these I better research and see. I like your method…. It’s easy enough I could do this! I can pressure can without problems… but I’m timid to start water bath canning! Go figure!
You are supposed to water bath jams and jellies, I personally have not had great luck with water bath method. If you use my method make sure your jars, lids and jelly mixture are HOT. This will help them keep!

I use Redmond real salt but I have used the Morton brand of pickling salt as well and both of them have done well for me ☺️

Why do you turn your jars upside down?
I’ve made strawberry jam for several years. This year it didn’t thicken/set. What did I do wrong?
I’m honestly not sure what makes this happen sometimes! I know if the suregel is out of date it can cause it not to set. But my mother in law is actually who taught me to make jelly and last year and year before hers didn’t set either, we have no idea what in the world happened
How long did you keep them upside-down??? Just till they cool??? I make strawberry but now I want blackberry lol
Yes I keep them that way til they cool then just flip them back over and the jam exceeds what I expected it to taste like!

Do you have problems with the spotted wing drosophilia fly larvae? In western Washington, all blackberries are infested. Tragic. 😢
Oh no! I have actually never heard of these, I googled them, but I don’t believe we have those here. We do have Japanese beetles pretty bad here and they are starting to terrorize my blackberries, last year they also ate the corn silk out of a lot of our field corn causing them to ruin 😢 I hope you can find a solution my friend!
